I found the simplest dish I can make with cucumbers and the tastiest too. I love this so much I've been eating it every day. I'm sure there's a possibility I'll get bored but for now it works for me :)

Large cucumber chopped in bite size pieces
Bunch of scallions shopped
Several spriggs or fresh Dill

Mix a cup of warm water with 1/2 tsp of raw honey and then add 1/2 cup Braggs vinegar. Add mixture to he cukes.

I refrigerate over night and it's really good. I make sure I drink the leftover juice too. Been thinking about trying avacado mixed with the sauce but not sure.

I do something similar to this -- but use way less water ... I sometimes add tomatoes -- adds a nice flavor. I have added avocado (not marinating overnight tho ... just before I eat it).

You're right - it is simple and totally delicious!

simple and delicious. It sounds like it would work with zucchini/squash too.

MMMmmmm! I'd like that with sweet potato shreds added in, maybe forgo the scallions and replace with chopped mizuna for a light kick.
Thanks for sharing it. Reminds me I need to get some dill seed for the garden too.

I'm not sure what mizuna is...a pepper? I'm going to have to google it.

That is a mustard green. A pretty plant, me thinks. It's a little milder than a broadleaf mustard green. I use it as a substitute for peppers, which I am not supposed to eat.
Here is a mizuna start. The frilly one.

I too have been on a cucumber kick. Will definatley try some of these--they all sound so good.

I love cucumbers as well. I have been enjoying thinly sliced cucumber with fresh lime juice and sea salt...if you like tangy then it is just YUMS:throwhearts:

I love cucumbers. Any way of eating them is good. Those are all yummy recipes. Cucumbers have made me grow more silky hair and more hair at that, not that I needed more but makes your hair, skin and nails grow and look good. :)

Raw grated beets are also delicious with the honey and Braggs.

Yum, going to have to try that!! I love raw beets.
