View Full Version : Frozen Coconut water

Hi all!
I had 3 green coconuts that I went ahead and drained out because I was headed out of town, and didn't want them to go bad. I froze the water in a plastic container (which looked fine when it came out) and when I got back, there was a purplish-pink slime on the top and bottom of the water. Is it still ok to use? Should I scrape off the colored part? Why would it have done this?

Also, how long are green coconuts usually good to keep around before getting the water out?

If I understand correctly - you opened the coconuts, poured off their water - which looked fine at that time - then you froze their water. Once frozen it developed this slime? Or upon thawing..? Did you freeze the meat too?

I have frozen young Thai coconut water many times (in ziploc bags) and I've never seen this happen. Slime does not sound good - personally, I would not drink it, I would discard it. *Ü*

When I freeze just the coconut water in ice cube trays, I leave it in there until frozen then pop it out and put them in a baggie. I never have had them change color. I pop them in the smoothies later on.

I probably wouldn't use it if it was slimey. Had to dump 2 recent coconuts like that....waste of 5 bucks, but didn't feel like getting sick over it.

Yes, when I opened them they looked fine (a slightly whitish-clear liquid) and I froze the liquid all together in a larger Snapware container with no meat. When I returned from vacation about 5 days later, the container had popped open a little bit (the airtight seal was broken) and the purple goo was there. It's only on the top a little bit, and some on the bottom. It has NOT permeated through the giant "cube" of frozen water as far as I can tell. I think I could wash off the block and it would be free of the purple.
