When I was young and growing up in the countryside we would eat almost anything raw but I have to admit that I was never able to handle rhubarb.

it is very high in oxalates, especially near the tops, so if you eat/ juice too much of it, it may give you intestinal troubles if you are sensitive to them.

.... always the operative words.... "too much" of anything is certainly not good for one ~ that's what makes it "too much"...

I'm pretty sure that with rhubarb, too much is actually less then most other things lol. I personally have issues if a i eat more than a couple stalks. If someone is juicing them, they may use like 10 - 20 stalks, which I think may be too much ;) On the other hand, I can eat 10 mangoes or more at once, which someone may consider "too much" and suffer no bowel problems

I grew up back east and enjoyed eating it raw. Of course we also dipped it in salt or sugar at times. Wonder if it would soften in the dehydrator because stewed rhubarb is wonderful--would be even better rawified.

i've juiced it and LOVE the juice!!! i believe i blend it with apple and ginger if i'm remembering correctly. mmmm mmmm gooooood
