Just took my first stab at making raw cookies and they turned out GREAT!
Didn't use exact measurements when making it since it was kind of adding until I got the taste and texture I liked.
Soaked a cup of dates for about 5 hours and then put them in the vitamix with water until they were all chopped up.
In a food processor I combined macadamia nuts and coconut until they were finely ground up.
Made a banana pudding using some of the date water and 3 bananas (left over date water for smoothies!)
Combined the pudding with the nut mixture in a food processor until well mixed.
Spooned out on wax sheet, added a dollop of raw agave to each cookie and they are now in the dehydrator.
I don't know how they're going to turn out once they're dry, but the mixture itself was AWESOME! Had to quickly throw them in the dehydrator so I wouldn't keep nibbling at the mixture :P
Totally amped to see how they turn out :drool:
Next time I make them, I may dehydrate some banana chips, chop them up and sprinkle the bits on top of the cookies :)
