I tried sprouting raw sunflower seeds, and almonds. I'll tell you how I tried to do it, and you can tell me where I went wrong. ;)
1. Soak overnight.
2. Rinse.
3. Sandwich between wet, multilayered paper towel for ~1 day.
4. Excitedly open up seed-sandwich in the morning AND -- awww... none of them sprouted. :/

I've never tried the paper towel idea.
But it's gonna take more than a day for the sprouts to start really growing. Give it another day or two and you'll see growth.
I've only ever sprouted in mason jars so I have to rinse twice a day minimum to keep em from going bad. But if it's in paper towels I don't know if you'll need to rinse em to keep em from going bad. But you will need to keep em moist or the tiny sprout will wither.

The sunflower seeds should sprout for you. I've never used a paper towel method -- I've used jars, or bowls, trays, and now use the easy sprout container. They need a couple of days to get sprouted. If you have a spare colander, just put the seeds in and lay the paper towel over them ... remove the towel and rinse a couple times a day and that should work fine.
If you want tall sunflower sprouts, you would need to put them in some type of soil or blankit bedding to grow. But it isn't necessary to have tall sprouts ... you can use them with just the tiny 'tails' that develop in a day or two.
Re the almonds ... I've never "sprouted" almonds, just soaked them, and let them sit in a strainer for a day. They are much more plump and have a small white 'bump' on one end. That would be the "sprout", but you'd use them after letting them set a day. Don't think you really get a 'traditional leafy sprout' on them.
In my experience, none of my almonds have ever "sprouted" per se.
I always use a mason jar and have great luck with sprouting hulled sunflower seeds, but it takes me more than a day. *Ü*

Hey... just a few hours later, and the sunflower seeds are sprouting like crazy!
Almonds have little tiny buds coming out of the ends too!
