Not sure if I posted the caramel coconut cookies already or not, but here they are...Man! They are SO good to, warm and chewy, EXACTLY like right out of the oven!
Then there's my cinnamon rolls with "frosting", I had to break one open so you could see how much it resembles a sad roll.....that doesn't sound right  anywho,
Then there's a tray with some sweet potato chips on it, I consider these to be my first successful batch!!! They are AWESOME !!! The one problem I do have with them is that I can only fit so many in my dehydrator and once I put them in a bowl and sit down on the couch with them, they're gone in 5 bites!!!!!!

Wow, thanks for all the kinds words guys!
"potato chips":
1 sweet potato - peeled and sliced VERY THIN , I used my Saladacco Spiralizer. Maybe they came out to thin this way but I've used a mandolin before and they were WAY to thick, but I was content with these
(I hope it's ok to post this)
http://www.rawfood.com/cgi-bin/order/index.cgi?id=175215773970&d=single&item_id=0357&c=Appliances&sc=Food_Processors&tc=
In a bowl mix:
olive oil (I used the "bacon" recipe for amounts, so...) about 2/3's of 1 cup, but that was A LOT and you could use much less.
salt if you like really salty chips use a lot , if not use much less, I used about 1 tablespoon...but I didn't measure so that's a guess
and about 3 to 4 tablespoons of apple cider vinegar
If using a spiralizer then break up the spiral into single round circles.
Place potato pieces into a flat dish (I used a glass baking dish)
Pour oil mixture over pieces to coat all of them making sure they all get their share of oil
Let marinade however long you can ( I let them marinade overnight )
Remove them from dish put them on dehydrator sheet. I use a teflex sheet on my bottom tray only as a "catch pan" for the oil. I do not use a teflex sheet on the above trays.
Let dehydrate for a day. Mine had JUST turned crispy after 1 day I kept them in there till the following afternoon and they were crispy but not "crunchy"...I really think I used way to much oil. Still I down them like the o'grease chips from days gone by and that's snack enough for me! ;)
carmel coconut cookies I got from this site .... somewhere, They are imo the best cookies I have made yet!

I read the recipe and it calls for flax meal as well as almond meal...can I just double the flax meal amount? Thanks for any help!

These recipes all look so good. I am shy to make all these wonderful treats.
I am finding since going raw that most of the foods, other than all the fruits and veggies, green drinks, revolve around recipes/ foods that are high in ingredients like Coconut, Dates, Raw honey..i.e. Sugars ! and Flax Almonds Pumpkin seeds and the like = Fat !
So in eating the raw diet I am finding my Fat intake has increased markedly...and I think to add sugars to the mix will = unwanted weight gain. My diet has increased from 15-20% fat to 30 with just adding the seeds and flax!
Does this make sense to anyone ? Was anyone else concerned about this when going raw ?
A recipe section featuring low sugar deserts would be fabulous ! I find it hard to "bake" (albeit raw..) with stevia as the dates and sugars are needed to hold things together ! so HELP !!

I friend and I both made Elaina Love's cinnamon rolls at the same time.
She said hers disappeared immediately (her whole family loved them) while nobody in my fam, not even me, cared for them. They were very dry, not moist at all and rather tasteless.
I kept asking her what she did differently, and she said nothing, she followed the directions exactly, which is what I did.
I wondered and I wondered and I wondered until one day she came over and I still had those rolls in the fridge and offered her some.
I was still very perplexed about why hers came out so great and mine didn't when I asked her how long she dehydrated them.
She responds "dehydrate?"
"Yes, how long?"
"I never got to dehydrate them. They were perfect just after I rolled them up. Just like the ones at the mall."
Hmph.
So mine went to waste, however not really, because she took them home and used them as a base to a birthday cake for a fellow raw fooder. She saved a slice of that cake for me and it was divine.
So, at least something came out of my dry, hard cinnamon rolls.
Oh, and even if you like how they came out, try not dehydrating them, or just heating them up to warm without drying them out too much. You might enjoy them even more!

twinee1, there is a tremendous difference between cooked fat and raw fat. They do not compere 1:1 at all. I have lost 60 pounds eating bananas and almond butter, oil dressings, date nut torte, ice cream, nuts, seeds, blueberry pie, apple crisp etc and of course greens and fruits.
I trusted completely when I started this that I could throw counting fat grams, carbs, calories etc out of the window and I was not at all disappointed.
Because I allow myself such a yummy variety, with the freedom of not worrying or counting , I am still doing this many months later, with great joy and no desire to ever stop.
I know at first some recipes look intimidating, but that is just in imagination. Try some out even though they seem that way and you will be surprised! It just takes a few experiences and you will shake your head about what you thought would be so complicated.
Gift yourself with freedom!
Oh here is a post Alissa had in a different thread that might help.
"And you will always crave fat sources if your not eating enough of them. At first you will crave more on raw, avocados, nuts, etc.. because your body is adjusting to a new way of eating. Your body is using these fats much more efficiently and quickly then cooked fats so you need more at first since your body is not used to the clean fuel its getting. It will subside, but give it time. I can promise you this. If you do 10% fat you will be craving fat more often then not. Maybe not at first, maybe not in the middle, but at different times. Why not just eat raw and let your body adjust. You wont be eating tons of nuts and loads of fat for very long. Youll get sick of it. Your body is craving it for a reason. Maybe it needs the good healthy fats and maybe you shouldnt deny it that.
Also, I would eat more avocados and fatty fruits and vegetable instead of tons of nuts as you wont feel great after eating that many nuts. But again, you need to step back and let it take its course. Raw food will never work if you need to be perfect with your diet. Its not set up that way. If youre a calorie counter, fat watcher, carb and protein analyzer (not saying you are) then this isnt the diet for you.
This diet is so beautiful and feeing. Let it be that. Whats the point if your going to do it the same way you did cooked?"

That is such good advice..and so true. I am noticing my tastes, preference are all changing. I transitioned to (almost) all Raw over a period of 6 weeks and now even some transition foods are not desireable ! I am now doing the 30 day Raw Challenge and doing fine on it.
I will give this time and I am a long time calorie counter (since I was 14...now I am 44..) and during the Competition years I became obsessive about the carb/fat & protein ratios. So now I need to let all of that go and let my body be my guide !
Thanks everyone for links sent to me. !!!!!!!

Ah, GlimR, that looks divine,
Now, did you refreeze your banana ice cream? because Mine comes out of my champion like soft ice cream, and this looks like hard.
When I re-freeze mine, it loses flavor somehow, doesn't taste as rich and creamy.
Ive made an ice cream out of soaked cashews and dehydrated bananas and dried fruits, that is really good, but the plain banana ones, just seemed a little runny, or soft, when I made them, your's looks perfect.
Secret?

Hello Lady~ *s*
This morning when I went to get some frozen bananas for my smoothie out of the garage freezer I found that somehow the door had been left ajar..so...I had about 8 lbs of frozen bananas partially thawed and had to use them up quick. I made the regular banana ice cream in the food processor and then poured it in to several plastic containers...no choice. Several hours later I just scooped it out..voila~ :) The addition of the drizzled honey and pecans on top was a huge improvement and made it seem much more decadent~
Also had to use two big bags of frozen corn...have three batches of enchilada "bread" in the dehydrator now...Haven't tried that yet so hope it will be good.

Do you freeze your banana in the skin or peeled? I always peel andchop mine but I am thinking that everyone else just freezes their bananas "as is". How long do they last in the freezer before getting "yucky"
Thanks for the help!

I always peel them, break them into 3 or 4 pieces and fill a ziploc or container.
I've never kept them more than a month but I think they would keep a good long while...have always used them too fast to keep them any longer~

I think most people peel first and then freeze. Otherwise the peel would be too frozen to unpeel =)

Definitely peel before freezing. Otherwise, when you try to peel the frozen bananas, tons of peel sticks to the banana and it is a big pain!

RP~
I had some more today. It was as hard as a rock when I took it out of the freezer.....had to let it sit for 10-15 minutes or so till it was soft enough to scoop....still hard enough to hold it's shape though. It is an amazingly delicious thing to eat. The pecans add a lot!
rawandnatural~
There are a lot of great recipes in Alissa's book, I loved watching the DVD though. It was very cool to watch how she does everything. This one is definitely my favorite so far. I want to try the Calzones too but can't find the buckwheat around here...am still looking~ This is by far the best "wraplike" thing I've made.

Hi Sharon~ *s*...it was very tasty!! :)
truthseeker~
The recipe is from Rose Calabro's Living In The Raw
Fudge Sauce
1 c. maple syrup ( you could sub. agave to make it raw)maple
1/2 c. raw carob
1/3 c. olive oil
pinch of sea salt
1 T. vanilla
blend well till very smooth and velvety
I made it with the maple as I was out of agave..suppossedly the maple lends depth of flavor but I am sure the agave would be good too...and raw~
It was great!!!

Hey Truthseeker!
I had a question about the Cinnamon Rolls you made. The recipe (on the website) calls for almond meal; I have leftover almond meal, but I've dehydrated it so it would keep longer. Do you think I would still be able to use this even though it's been dehydrated? Maybe I'd just have to add a bit more water than normal?

Yes, I would use a little more water if you've dehydrated the almond pulp.....or just make some more almond milk ;)
2 thumbs up!
The food looks absolutely scrumptious, especially the cinnamon rolls.
The cinnamon rolls reminds me of Cinnabon rolls.
It's ironic because my boyfriend is sitting on the couch eating Cinnabon and it looks identical to yours.
I know, I know, he eats SAD foods. I was trying to convert him into eating healthy, but the more I push the more he seems to resist.
Maybe, I can make the cinnamon rolls for him when my dehydrator comes in next week, instead of him eating Cinnabon.
Do you mind if you share your recipe with us?
Thank you.
