OK,,, first, I knew I wanted to share something,,,, now I remember!! This last weekend my hubby found( and it was soooooooooo cute,, he brought it home like a box of gold or something,, very good hubby he is,, he was so proud of himself!!),,, anyways,, he found some baby coconuts at the store...first time we had ever seen a real one. Tried a safeway bought one awhile back but it's milk was like whiskey,, gross!!! So I sat in a hot bubble bath and sipped on my coconut!! I felt like a queen :D Just wish I looked like Allisa does in her pic in her book sippin' on coconut !!! She's so cute!!!!!!!!

Also, Jicama,,, I made potato salad with it, but it was so hard to peal.. Is that normal? I acutally really didn't like the salad and Im' so sad about that cause it looks so yummy, but it is too crunchy for me... But I do want to try the fries so I'm wondering about the pealing part.

I love jicama in salads. I love the crispness. I would use them like cruddettes (baby carrots, celery sticks and such) and you might like them more. You were probably anticipating something more soft like boiled potatoes, so the crispness might have thrown you in a potato salad. yes they are harder to peel, thick skin!


Baby coconuts sound so lovely!

I think your exactly right, I was thinking softer,,,

I forgot to say that another thing with the coconut( I know you guys all know this, but I am shocked),,, is that the meat was so incredibly soft and moist and yummy!!! It's just amazing to me the new things we learn to eat and love....
