I read alot of 'you' drink kombucha. I had it years ago but I don't want sugar in my system now. Does the sugar change or will I get a hypoglycemic reaction. Also, can I use decafinated tea ?
There seems to be a few different techniques when I search the forum, those of you who are experienced kombucha makers and drinkers - what is the best recipe ? :juicy:
Thank you :throwhearts:

The longer you let it brew, the less sugar it'll have.
The culture of bacteria & yeast feed off of the sugar & the caffeine.
By the 7th day, there is trace elements of sugar, & it is recommended
for a strong batch to brew around 15 days.
At that state it is safe for diabetics, but it tastes more vinegary.
I like mine a little sweet, I drink it on the 5th to 7th day.
I ordered mine at:
http://kombuchahealthdrink.com
Their how-to make kombucha section was really helpful.
I think it was 20 bucks with free shipping & online support.

Thank you, TheresaRex - great website, very thorough - I e-mailed them about the caffeine content.
