how long do they last in the fridge?

About 3 days ~ until they get moldy.

Okay so do you suggest just soaking as needed? Its just a pain because of soaking for 8 hours so if i decide suddenly I want something and they aren't soaked then I can'tt.

You can put them in the freezer.
You can dehydrate them. I do that with seeds. I soak and then dehydrate them in bulk.

Dry them before storing.

You can keep soaked nuts (almonds anyway) for a week (covered with water) if you change the soak water every day.

My seeds last for months just dehydrated. I use very little. I keep nuts and seeds in the freezer for years but maybe someone will tell me not to
