Before I went raw I loved to eat avocado rolls (nori, avocado, brown rice). I'm looking for something to replace the rice, any suggestions??

I think I've heard of recipes for cauliflower rice. That might work for these. I also saw someone mention using sprouted wild rice in another thread - it would definitely taste different than sushi rice, but might be good.

Or you can get super fancy and creative. If you got a dehydrator then make your own crumble.. something like sunflower seeds, zuchinni, raw honey or dates, wasabi, ginger and lemon juice blended and dehydrated into a crumble (I literally just thought that up, I always do different stuff... sounds like it would work out!)

Yep, I just use shredded carrots too. :)

Had nori rolls on the weekend actually. Shredded carrot (done in a shredder, you can use a food processor or even a hand grater), sliced tomato, red bell pepper, chives, zucchini, avocado and a tahini sauce (raw tahini, lemon juice, salt and garlic). Roll em up and eat em!

Would soaking rice work? I've never tried that.

Probably not, the rice would need to be sprouted to be palatable. It's just one of those things most people don't do due to effort, like trying to make raw breads and crackers out of grains (a hassle and other subs are much easier ans tastier).

The most popular substitutes for rice in nori are the processed cauliflower and carrot. Others include a tabouleh like mix, daikon radish or jicama, or just plain sliced veggies.

I use Jicama! I even dehydrate it to remove the water and i love it!!!!!

Thanks everyone! I'm thinking of trying to find a recipe for caulliflower rice for the next time i go shopping but for now ill prob just use the carrrots! :)

Definitely, jicama. Process peeled, chopped jicama in the food processor with a few cashews or pine nuts until it looks like rice. It is very mild in flavor and takes on the flavor of whatever sauce you are using for dipping.

I juice both cabbage or cauliflower and use the pulp as rice. I like the idea of a few pine nuts someone else mentioned - to give it a little "richness."

Ive never had jicama before, and i never thought of juicing caulliflower that sounds like it would work well!

I use alfalfa sprouts instead of rice, my carnivore SAD husband said he prefers my nori rolls to ones with rice! Coming from him.... that is one BIG compliment!

I layer avo, shredded carrot, red capsicum and then alfalfa, they not only taste delicious but they look fabulous too!

Sounds good! Ive used alfalfa sprouts also. Ive done miso, alfalfa sprouts, not tuna pate, avocado, carrots, and cucumber! So yummmy :)

You can just use sprout, i love buckchoe green and your avocado. No need to use something starchy. One Alissa recipe, she uses califlower as a rice.

You can also make a shreded coconut with a lovely tahini sauce with cumin in it. I had that at a raw food festival and it was so good.
