I have been pretty busy last couple of days and totally forgot about the almonds I had soaking in the fridge. They've been soaking for like 2 days, are they still ok to make almond milk with or should I toss them out?

How do they smell? You've probably drowned them after all that time. I'd toss them and start over.

Jo-anne, 2 days is ok. Go ahead and rinse them off and use them. I have left almonds for 2 days before. Generally, you would want to rinse them off periodically and not leave them soaking for that long in the same water, but in this situation, you can make an acception.

cool thanks Samuel, I'll rinse them off a few times and see how I go. Revell, they smell ok, so I'll use them but next time I won't keep them in the fridge for so long.....almonds are soooo expensive and I would hate to have to toss them out........but, I've learnt my lesson now!

I know your question was answered, but I was just a little curious -- you said they were soaking in the fridge. Was that your initial soak? Or was this just keeping them covered with water after you'd already soaked/sprouted them on the counter?
