This is the second time I've made this raw vegan cheesecake and I just love it and wanted to share.

It's pretty simple.. there are 4 layers to it, here they are from bottom to top.. the "graham cracker" layer, the "crust" layer, the "cheesecake" layer and the "sauce" layer.
For the bottom layer I just used dried coconut spread on the bottom of a glass brownie pan.
For the crust, in a food processor, I blended: 1 1/2 cups of raw macadamia nuts and 1/2 cup of dates
For the filling (or cheesecake), in a food processor, I blended: 3 cups of cashews, 3/4 cup of lemon juice, 3/4 cup of raw honey (or other raw sweetener), 3/4 cup of coconut oil and 1 tablespoon of vanilla
The sauce can be any fresh or frozen berries.. I used 2 cups of frozen mixed berries blended with a 1/2 cup of dates.
I popped it in the freezer for almost an hour to "set".
It's VERY good :)
