View Full Version : Nacho cheese!! Mac n cheese? (and a how to question please)

Bananna referred me to this recipe....(thanks!!)

I just made this "cheese" and I love it!!

I can't wait for my daughter to try this out..she is a cheese-y/cream-y fiend like her mama. I don't have a cool blender yet so it took me like at least 15 minutes to make it all smooth and creamy. It tastes like nacho cheese! I'm tempted to go buy some pasta so I can turn it into a mac and "cheese" dish..yumm...what would a good "raw" macaroni be? Any suggestions? Besides kelp and zuchinni? Also..how do you make "spiral" pasta with just a peeler? (new toys are not in the budget for at least another month)

Ingredients:
1 cup raw cashews, sunflower seeds or almonds
½ large red bell pepper
¼ cup water
2 tablespoon lemon juice
2 tablespoon nutritional yeast
1 tablespoon tahini
1½ teaspoon sea salt
1 clove garlic
2 teaspoon onion powder (or a small slice of onion or 1 Tbsp of green onion)

Preparation:
Blend all ingredients until creamy. Add more water if it is too thick.

I think such a shape would be quite difficult. xD You'll soon find yourself gravitating away from trying to fulfill the visual comforts of SAD foods, so I wouldn't buy an expensive device (if you find one) if only for that purpose. BUT, if you wanted to just make your noodles extra fun looking... I'd totally understand if you found a way. ;D

For the cheapest noodle appliance, I'd go for a julienne peeler. They're only a couple dollars. If you're willing to spend about another 10-20 dollars, I'd go for a spirooli (which is what I own) or saladacco. John Kohler on youtube has some videos on how to use them and the type of noodles they make if you want to compare. Be innovative! My friend's raw "baked" mac-n-cheese is a thick rich cheese sauce atop saladacco'd angel hair style zucchini noodles. To be honest, it tastes so much like the real thing I can't eat it (but everyone else at the potlucks devour it ;P).

If you don't wanna wait or spend anything, I'd grab a zucchini or summer squash and rotate the sides as you peel it into fettucini-style noodles with your normal veggie peeler. Just add a sprinkle of salt and let the noodles sit for 10 minutes or so before you eat them so they can soften. That was one of my methods when I was completely fresh to raw foods (and I was 14 years old!).

looks good and I'll will give it a try but I dont have the yeast yet...also does anyone know how to make tahini ? can you do it without roasting the seeds ?

Hi kaleboy..... You can buy the sesame seeds raw and just grind them down into a "butter" consistancy either using a blender or the gear style juicer. Hope that helps

Thanks!! And by the spiral noodles, I actually did mean the raw ones that you've described with the peeler so thanks for the tip!! lol although those wheat-y pasta noodles look soo good.... :drool:

Heyy!!! Glad you tried and liked the cheese!!! That's too awesome...yay, I made a difference in someone's life, lol.

You could try kelp noodles! www.therawtarian.com has a section on mac'n'cheese too, with a different cheese recipe, but she uses kelp noodles.

These noodles, they are amazing, they are like REAL noodles...but a light green colour, but same exact texture as cooked noodles, no real flavour (like real noodles too, lol) and are an unbelievable puny small number of calories.

I have no idea where you live...I live in Canada, close to Toronto so I order mine from upayanaturals.com ...but if you are near a Whole Foods, I hear they also sell them. ...the rawtarian on the above mentioned site eats so many that she just orders them straight from the company in bulk, lol...I think you can freeze them.

I was wanting to make nacho cheese stuffed jalapeno's far awhile and this recipe looks perfect! :dance:
