Hi!

It's been awhile, but I thought I would give raw foods another try. I liked the results from the 1st attempt, but got sick and got lazy. The SAD meals were just easier. So, this time I'm going to work it into my diet over time instead of trying to do it all at one time.

Of course, now that I want to get back on the wagon, I can't find my book. I think I may have packed it away. I have the recipes for the date tort & zucchini pasta, but can't remember the recipe for the walnut pate. What I remember is walnuts (not sure how much), 1 bell pepper, 1 celery stalk and something else. Could someone help me out with this? I definitely want to take raw meals to my night classes.

The Walnut Pate I make is with soaked Walnuts, lemon juice, tamari, olive oil, garlic powder, onion, parsley.

Here ya go!

1 cup soaked raw walnuts (rinse and soak 4 hours)
1 Tbsp fresh lemon juice
1 tsp extra virgin olive oil
1 tsp tamari
1/4 tsp organic garlic powder
dash of salt or to taste
1 Tbsp fresh minced parsley
1 Tbsp minced onion (I use a red onion)

Equipment: Food processor - I haven't tried it in my Vitamix, but that should work too.

Drain walnuts and rinse. Place walnuts and all other ingredients EXCEPT the parsley in onion into the food processor and grind into a paste. Transfer to a bowl and fold in onion and parsley.

I usually double this recipe and it keeps wonderfully in the fridge for a few days. I love it with marinated portobello caps, wrapped in a collard leaf or with crudites or with flax crackers. Love it.

How can they be possibly easier? No cooking whatsoever is needed on raw, can't be easier than that.. Just grab a fruit, nuts, whatever, and eat :) One of the reasons why I like this diet.

Sorry to insult your "raw intelligence" dime. :hug For me, at the time, prep time (cooking every meal everyday), cost & shopping was becoming an issue. I like to eat a meal and not just grab & go items. Now that I know more, I'm sure I'll do better with it.

I think a big perk of being raw is how simple you can be with it. Sometimes I only eat one fruit for a meal, it doesn't get simpler than that. Of course everyone is different, and many people love prep work and having raw meals resemble their old foods, but I think it would be helpful for you to simplify your meals. That would have two effects, one it would cut your prep time back, and it would help your digestive system.

Simpler the better I say.

Yup, that's the plan this time. Simple, simple, simple.

When I first tried it last summer I was following Alissa's 21 day plan and every meal needed to be prepared. I was still learning about the lifestyle and didn't know about shortcuts to help cut back on prep time. Coming in tired from work and having to "make" something because I wasn't eating what everyone else was eating was a little tough at times.

I like the process of preparing a raw meal, but not with every meal. Now I know more so I can definitely simplify things.
