:confused I've read that coconut butter and coconut oil are interchangeable and then I find other info that says they are different and used differently.
Can someone explain - I have the butter and love a teaspoon as a dessert - takes care of my craving for something sweet and naughty.

I get confused about it too.
All I know from experience is that the coconut butter I have has a coconut flavor where as the coconut oil I have doesnt have that strong flavor.
I think there is more to it then just the flavor though....

Ok, coconut oil is the product that has only the oil, so when it's a hot day, it melts into a (usually) clear liquid.
Coconut butter is both the coconut oil and the coconut meat mixed together to form a spread which has more body than coconut oil and which does not go clear when it melts in hot weather and in fact often doesn't go liquid (depending on the brand).
Here's where it gets a little complicated. The terms coconut oil and coconut butter are interchangeably used for the coconut oil, mainly due to the fact that the coconut oil when cooler has a butter like consistency. The terms are generally interchangeably used for coconut oil in places where the coconut butter is not readily available.

Coconut butter has more of a rock solid appearance, like a chocolate bar...that's why it's often called for in chocolate bar type recipes.
