Are hulled sesame seeds found in the refrigerated section in health food stores raw if they are not labeled as raw? I wonder if in the process of hulling, they are subject to high temperatures? If so, they are already dead and the process of soaking/dehydrating them is meaningless, right?

You should consider buying the ones with the hulls still intact as they are listed as alkalising whereas the others are considered as acidic.

Thank you for responding, sport. But can brown sesame seeds make tasty tahini? I think it will have a bitter taste.

I will not be at home for another few days and will try and find it then. I have a poor memory but am 100% certian trhat I read that as I was very surprised by it myself.
