View Full Version : What can I sub for Pine Nuts?

I'm dying to make Alissa's pesto stuffed mushroom, but I couldn't find any raw pine nuts! What do you think a good substitute would be without changing the flavor? I have cashews, brazil nuts, walnuts, pecans, hazelnuts, sunflower seeds and pumpkin seeds. Should I just use the walnuts, or mix in some alternate?

Because pine nuts are so expensive right now, I've been using walnuts. They are a great taste substitute. Pine nuts are a little more bright and buttery, but walnuts are deep and smooth and buttery. It works :)

I was surprised to see our Costco finally has pine nuts back in stock. $25 for a 1.5# bag. Still, that's cheaper than our cheapest store in town @$20.00 a pound. I love marinating my mushrooms overnight in a gallon ziploc bag in some Nama Shoyu (or tamari), lemon juice, olive oil and minced garlic. Then I stuff them the next day and dehydrate. *Ü*

Cashews or macadamias would be good substitutes as they have similar texture and taste.
