Does anybody know of a salad dressing recipe that is low-fat and also contains no nightshades? (nightshade-sensitive)

Why not blend up some strawberries, apple cider vinegar and pepper? Maybe you could add a tiny bit of oil..
Personally I just like to sprinkle lemon juice on my salads, if anything.

A few dressings with citrus or apple cider vinegar you'll find with those requirements. You may want to experiment with those two, along with various spices. If you like sweet, some fruit based ones can work well. You can add garlic or cilantro to give it some spice. You can also take various sauces from other recipes to use as dressing.
Kale Dressing:
Kale
Orange Juice
Celery stalk
Cucumber
Super Tonic Dressing:
Cayenne
Ginger root
Garlic
White Onion
Horseradish root
Apple Cider Vinegar
Mango Chutney:
4 cups Mango, diced
3 Tbs Lime juice
2 Tbs Ginger, minced
2 Scallions, diced
½ sm Jalapeno, diced
Sm handful Cilantro
½ tsp Salt
Mustard Vinegar Dressing:
Mustard Seed Powder
Apple Cider Vinegar
Olive Oil
Dash Salt
Optional: Dash Agave

My favorite salad dressing is cucumber-juice based.
I juice a few cucumbers. I add cilantro, raw honey, garlic, onion, and red pepper flakes until it's the right taste/consistency. Usually I do this in the food processor first, then the blender for the perfect consistency. I add in a bit of the cucumber pulp as needed for consistency as well.
If I am feeling the consistency is still lacking, I add in some raw olive oil too, but it is certainly optional if you are looking for a "low-fat" dressing and I like the dressing without the oil too. It makes a "watery" dressing without the oil, which is unlike "normal" SAD dressings, but it still works just fine!
You can leave the red pepper flakes out if that causes nightshade problems. I just like it for some zing. But this is also a very good, almost sweet, dressing without them (just watch your raw honey amounts because a little goes a long way!).
This dressing separates just like a normal oil-based dressing, so it needs to be shaken before serving, just like a traditional "italian" salad dressing. But it is mostly cucumber juice!

I concocted a yummy strawberry dressing -
1 pint strawberries
juice of 1/2 lemon, I used Meyer but any will work
pinch of ground cardamom - not sure if this is in the nightshade family or not
2 soaked Medjool dates, cut up smallish, pit removed
Whiz this in your blender til smooth. Very tasty over a papaya and avocado salad. Brings the summer into your salad.
