My boyfriend has this joke that he always always ALWAYS wants pie. At any given moment, he wants it, even if he doesn't realize it. We've been on a post-holiday weight loss "program" with good success so far so he knows pie really isn't an option very often. A RAW pie is different though, so to celebrate valentine's day I told him I would make him a pie that was good for him through and through.
I had a look at some raw pie crust recipes and then, per usual, just kind of winged it. I even got a killer food processor at Macy's for 70 bucks (the pro classic and it came with the works!).
Here's the recipe:
Crust:
3/4 cup English walnuts
1 cup raw wheat germ
1 tsp sea salt
1 tbsp coconut oil
1 tbsp agave
5-6 medjool dates
Process until you get a nice tacky crumbly deliciousness!
Press into the bottom of a pie pan:

Filling:
3-4 apples, thinly sliced (I used my slicer attachment on my new toy)
1 T Grade B maple syrup (for a nice strong maple kick)
1 tsp cinnamon (or more)
juice of 1 lemon
Topping:
Now here's the part I would do differently. I made a sort of cashew cream, but it was a bit overwhelming. I'd skip that next time and just do sliced raw almonds.
BF said it was the best pie he ever had and promptly ate about 1/3 of the plate. The crust was killer though. I might try it as a cobbler or "crisp" next time.
