Iits one of those days where it is cold and threatening to snow outside, and I cannot for the life of me think of what to make for supper.

Gazpacho with extra cayenne, onion and garlic. Didn't even need to warm it up...I'm nice and toasty.

Here's one I found:

2 young coconuts, meat julienned or noodled
2 limes juiced
½ cucumber, julienned or noodled
1 red pepper, julienned
Handful of cherry tomatoes, chopped finely
½ small red onion, chopped finely
½ -1 small jalapeño –depending on your taste
1 clove garlic
Handful cilantro
1 tsp dulse flakes
1 tsp Mexican oregano
Splash or coconut water, to consistency you like
Pinch of sea salt to taste

Combined all ingredients in bowl cover and let marinate for 1 hour in the fridge. Serve with cilantro, avocado, and raw tortilla chips! Enjoy

You can also watch the video for it here:

Yes! Drolemil, that is the very same recipe I used. Make sure you get dulse flakes, it's important for that authentic taste. Also, I just used the cucumber as chips. :woot:

I just made this chili last night, and it was SO AMAZING.

http://27.media.tumblr.com/tumblr_lgou83Hhxk1qcb57co1_500.jpg

Based off of this recipe, and tailored to my personal tastes. =]

To make
1 zucchini
2 beefsteak tomatoes (or the equivalent in other types of tomatoes - beefsteak were just the only canadian ones around. and they're deLICOUS!!! Seriously, how have I not known about their wonderfulness before!)
1/3 red onion (or 1 small yellow onion)
3 cloves garlic, derooted
1 jalapeno pepper, deseeded
1 medium carrot
3-4 portabello mushroom caps
1/4c coriander
1 red pepper
cumin, to taste (meaning I didn't measure well...maybe 2tsp?)
tumeric, to taste (see note next to cumin...)

OK, so remember in a previous post I was ranting about how wonderful food processors are because you never need to hand-chop anything ever again?? Well, guess what! For this recipe, we are not going to chop one thing by hand. Yay!!
So, have a big bowl nearby. Using the S-blade of your food processor, chop one veggie at a time, achieving the desired texture with each before moving on to the next (meaning: don't just go for over processed mush for all of them, strive for a little variety!). Once you're done with one veggie, empty the contents of the food processor into the big bowl, and move on to the next veggie!

I stir in the spices at the end, once all the veggies are in the big bowl.

For a protein punch, add some curried lentil sprouts (mix lentil sprouts with olive oil, cumin, tumeric and cayenne until well coated) or walnuts ground with a bit of cumin.

Enjoy your day in the raw!! Told you it'd be easy!!

I am SO excited.

I discovered by chance that the high-class restaurant I used to work for now has a portion of the menu that is entirely raw! My boyfriend and I b-lined it for the place tonight and though it was not cheap, it was worth every penny!

We started with raw cucumber spring rolls stuffed with avocado, red pepper, portabellas marinated in nama shoyu, and some other stuff that I didn't think too hard about. It was heavenly.

The main dish that I had was the greatest raw recipe I could ever have imagined. Raw lasagna with cashew ricotta cheeze, reconstituted sundried tomatoes, spinach, portabellas, cucumber slices and cabbage. My god. It was just heaven. HEAVEN. I will be going back. I never thought eating out high class could be so healthy and decadent.

Wow - sounds divine Reesh. I'm putting that restaurant on my list to try out SOON.

Let's see - we had a raw potluck at my house last night ... 13 folks took part and the food was incredible. Pizza with lots of toppings; stuffed portabella mushrooms; almond cookies; banana bread, carrot cake bites; mixed salad with a wonderful dressing; flatbread with an awsome radish spread; cucumbers and asparagus in a divine sauce; peppers stuffed with carrot pecan filling topped with curry sauce; borscht soup, date nut torte, coconut mago pudding ....

was a really fun and delicious evening :eat

I just made some marinara sauce and zucchini noodles. The last time I tried this I didnt have any sun dried tomatoes and it was really watery.

You guys are freaking me out with all this raw food talk. I wish I knew how to make them and where to buy this stuff. It's all Greek to me!! I think one of you needs to come live with me for a week. We could shop and prepare raw foods!!! :excited:

Jazzy I don't think it's nearly as complicated as it sounds! Start really simple! I love to cook so complexity is important to me, but I don't think it's for everyone.

Salads are usually really simple. My favorite ones are filling with baby spinach, avocado, tomatoes, corn off the cob, nuts, onion, cucumber and olive oil and lemon juice dressings. Salads are a great way to start. The simplest and one of my favorites is grated carrot and shredded red cabbage. So so so simple and really delicious!

Keep fruit around everywhere :) It's the simplest of all. Once you get the hang of it, you can do all the complex stuff people here talk about. I don't have a dehydrator yet, but I can't wait to get it so I can start experimenting :D

Tell me more about the salad dressing. How do you make that? One reason I don't eat salads is because of the salad dressings. Olive oil and lemon sound awesome.

I know what you mean. I have never understood how people say cooking is easy. Its probably easy once your into the swing of things but otherwise its rather hard.

Im currently eating raw unprocessed un chopped un anythinged carrots and cabbage. Im going to go to the store tonite and look at peanuts. Id love some cucumbers and celery but probably wont get any they cost to much :-( I may also get some fruit... mmm buying random produce.

If produce was cheaper id risk experimenting more but its not... sad kinda.

The red cabbage/grated carrot is mega-filling and really yummy with olive oil and a splash of vinegar. I would highly recommend that one.
Apples, bananas or pears sliced up with nut butters (yum!)
bowls of berries!
throw some bananas, strawberries and spinach into a blender with water! instant delish.
eat an avocado with a spoon. (sometimes I like to pour some olive oil, salt and pepper into the pit hole first)
cut a red pepper in half and eat it!

there are a lot of really simply yummy things :)
