View Full Version : Avocado watercress and pasilla chile soup

I saw some fantastic living cress at the market today and knew it would be great in a soup with avocado. I'm sure this recipe is out there somewhere done by others but here's how I winged it:

4 small avocados or 2-3 large ones
2 cups filtered water
2 cloves of garlic
1 large dried Pasilla chile
1 1/2 tsp kosher salt
juice of 1 fresh lemon
1 bunch of watercress (living if you can find it)
1/4 cup olive oil

diced tomato and some left over watercress for garnish

Blend it until smooth and enjoy!

While I know I have nothing to prove to my friends and family about my diet, I do want to show off my raw culinary creations, make them all want to lick their screen and maybe they'll all start to think: hey-- raw food looks really freakin delicious. I should try some of these recipes.

I made Cream of Leek soup the other day. I got two huge beautiful Leeks from my Co-op.

It came out much too strong. My SO said it gave him heartburn and gave his portion to me. I didn't like it either (used too much Leek-didn't realize how strong leek is).

Anyway, I added more water too it and put in the fridge utterly disgusted that I wasted my zucchini and other veggies. Well, determined to not throw food away, I decided to eat it for lunch the next day, and it was almost perfect.

I'm going to try more soup recipes.
