I'm having trouble finding raw recipes that are lower fat, lower calorie. So many recipes and cookbooks are so nut dense, having one plus cup of nuts per serving. Likewise for olive oil. I am finding it common to see a recipe that serves 2-4 with one cup of oil.

Anyone have anything juicy to say about this? Or rec'd any books? I don't want to gain weight going raw!

gaining weight with raw is a rare occurence. very rare. 99.9% of people release weight and then happily maintain their 'true weight' on raw live foods.

as Alissa Cohen explains in her books... eat - don't worry about it - just eat what you love and allow your body to get it's nutrients. you'll notice over time your body will start to want different things... just follow it's lead.

thank you. i have a difficult time trusting myself around food. i've been soaking up so much info these past few months. i've a vitamix and a juicer, and am having a lot of fun. i *love* green juice. i haven't ventured further than smoothies and juices (besides the massaged kale salad and giant meal salads i'd been eating before). i am ready to move to the next step, but a bit overwhelmed. it seems like i really need a dehydrator to move to the next level. and i am still intimidated by sprouting.

i've so much gratitude for this forum!

do you have best book rec'd for beginners who are looking to keep it simple?

alissa's first book (http://www.alissacohen.com/shop/livingonlivefood.html) is the one i recommend for ya. lots of simple recipes in there. you don't need a dehydrator but you'll most likely get your money out of it over the next 20 years - that's how i look at it. my hubby's coffee maker cost almost as much as my dehydrator did LOL
