Every time I make this it's a hit, so I thought I'd share. ;D I absolutely love adding bananas on top. The key thing is the amount of dates in the filling, because you want it to be sweet yet not-too-sweet, so the fruit topping can take control of the flavor. For coconut cream pie using dried coconut, I'd add a few more dates to the filling.

Cream Pie
Crust:
- 1 c almonds
- 1 c dates
- pinch ground vanilla
Food process all until crumbly yet sticky then press into pie pan.
Filling:
- 4-5 young coconut's meat
- 1-2 soaked dates per coconut used (ex: medjool are big so just 1, but deglet noor use 2)
- pinch ground vanilla
- enough water for desired consistency
Blend all, adding water as needed. Pour and spread over pie crust, then add any fruit such bananas on top if desired.

NOTE: The filling is delicious on it's own as a pudding w/ fruit chopped into it! :heart
