View Full Version : Your favourite young coconut meat recipes

Hey all,

I'm currently on a fast that is including a lot of coconut water. As a consequence, I'm really piling up the young coconut meat (which is ace by the way!) and would love to hear what your favourite young coconut meat recipes are.

I've got about two weeks to go before I'm off my fast and am looking for innovative ways to use it. I mainly tend to use it in custards, smoothies and on it's own (mostly on its own as I never get to keep it, it just goes straight down my yap hole!)

I watched this YouTube video (http://www.youtube.com/watch?v=nbXNymcSb9k&feature=mfu_in_order&list=UL)(Matt & Angela Monarch) on "Coconut Crisps". I don't have time to look for the video before this one (they said it was a few days before). But - we make them with lime and cumin & some salt. That's our favorite.

One of these days I'd like to get up the nerve to try the spirulina flavor...

I see they also have a video for coconut banana jerky. I don't remember seeing that one, but it sounds good! *Ü*

Thanks muchly Deb! That's given me the idea of doing samosa wraps out of them too. And tying them up with chives or spring onions!

I LOVE making parfaits (http://uncooking101.com/site/raw-food-recipe/raspberry-parfait/) with coconut meat!! You can switch out any fruit in the recipe attached. YUUUUUUMMY! :):eat

They make ice cream (and smoothies and frostings) a lot creamier. =]
Personally though I just eat the meat with another fruit or two chopped up, because I love it so much, and don't get it often.
It's fantastic with banana.

Shels, that's pretty much what I do most of the time (except a bit simpler, just scoop it right out of the shell and eat it!) It's just that with fasting I'm not doing
it and it's amazing how fast the meat piles up!

And yep, I'm thinking ice cream is a good way to go too.

Mango Pina Colada (a la G Living.com)

3/4 c coconut water
1/4 c coconut meat
cup pineapple
1/2 c frozen mango
2 Tb agave
1 Tb coconut oil
1 tsp vanilla

Blend and Mmmmmm.

Coconut Cream Pie

2 C coconut meat (young thai)
½ C coconut oil
¼ C agave
¼ tsp salt
½ tsp vanilla

Add lots of ice until it becomes a nice heavy thick consistency with a bit of a drizzle.
Pour this over whole fresh bananas and freeze!

Absolutely! That's what I do! I buy Coconut a CASE at a time at an Asian Market (9 in a case) and pop 1/2 of them open and freeze the water and meat separately. Then, when I need to make a smoothie on the run, I can just grab it out and use it. Or, I can take the water with me on the go! It begins to melt and stay cold if I need it! :excited:

Eva, thanks for the info on opening the coconut! I finally got mine open...it wasn't as easy as in the video but I guess it gets easier with time...

Here is a recipe that I found from Raw Food real world.

Chocolate Pudding
2 cups coconut meat
3/4 cup coconut water, at room temperture (or more, if needed to thin)
1/2 cup maple syrup
1/3 cup agave nectar
1/2 cup cocoa powder
2 tbsp vanilla extract
1/4 tsp. sea salt

In a Vita-mix puree all the ingredients until completely smooth, stopping to scrape the sides as necessary. Transfer to bowls and chill for a firmer pudding or eat it straightaway. I can't wait to try this. I think I am going to make it this weekend!:drool:
