Hello!
I am going to be traveling soon via airplane for a short overnight trip. I am concerned about being able to eat enough while away. I am only taking a carry on bag, so I can't put food in it. Even if I checked a bag, food wouldn't keep. I found a farmers market for the town that I am going to, but without a food processor or any kitchen supplies, I don't know what to make. I am mainly concerned with a lunch and a dinner. The breakfast, I can just do fruit for.

you could easily have fruit all day. a tomato with a little spices sprinkled on top. cucumber whole and simply munched on.
i'm so into simple foods... i seldom use a food processor etc.

I've been travelling with only a good knife and a small chopping board. There are so many things you can make with just these!
I also take along a little travel pack of condiments, sea salt, spices and dried herbs, sweet stuff like cacao powder and dates. A small jar (eg a baby food jar) is great for mixing up salad dressings (eg, lemon juice, sea salt, olive oil and herbs/spices or other dressings).
This way I can make a whole bunch of different salads, vegie wraps, dips using avocado, etc. And my usual fruit for breakkie and snacks.
I've also been travelling with my small travel blender. It fits into a back pack and comes in SO HANDY! If I travel with this I can also add to my menu soups, smoothies and milkshakes, custards, blended dips, and if I have access to a freezer, ice creams. EASY!
There are so many things you can do and ways you can adapt. I've travelled to remote parts of my country where fresh fruits and veg aren't readily avialble and been able to be 100% raw still.
You can also pack raw snack bars (commercial or home made, but commerical is better if traveling overseas for customs reasons) and things such as greens powders to add to foods if you can't get greens readily.
For such a short trip, you can so easily just enjoy fruit for the day. Love the idea from klomasius about the baby food jar. If you just keep it to a small jar, you can use a "nonperishable" dressing mix of: olive oil, apple cider vinegar, dried herbs/spices, salt, pepper for a VERY nice addition to any salad that will be good until you use it. Just make sure to have it in a VERY tight sealed container and to put it in the ziplock baggie for the "airport liquid police".
Also -- I often when traveling just bring a bunch of perfectly ripe bananas with an avocado or two and some apples/pears because they are easy to grab and eat as needed and travel well. This has been plenty fine for many many trips!
It sounds like you might be surprised at how easy it is to just stick to it and keep it simple!

When I traveled to London and Greece I made crackers and cookies at home before I left and ate these on the plane rides, I also brought prunes and raisins, they are good and easy too.

You can also take a few raw bars (either homemade or store bought). They are handy in an emergency and take up little room. Kiwis pack a lot of nutrients in to a small space.
Get some plastic cutlery. It is the only thing that will pass inspection at the airport.

Do you eat nuts. Those would be super easy to take along, and would make a great lunch addition to your fruit or veggies.
Also carrots will last a bit not refrigerated. Dried fruits.

Less than ideal, but I've been OK with it. Sometimes you can convince them not to x-ray it, but not always!
