Pickled Carrots ?

I made the recipe in Alissa's newest book for Pickled Carrots, and they are delicious!

How long will they last in the fridge? The recipe says to leave them 3 days before eating, but will they last indefinitely as long as they are kept in the fridge or does anyone know if the carrots will eventually get soft?

They are so scrumptious... I added a couple cloves of garlic when I made mine.

cool! I made Alissa's pickled Cucumbers and they are FABULOUS!!!! I'll have to do the Carrots next!!! You should post a photo on the book thread!!!

I believe they last forver in the fridge... Alissa, correct me if I'm wrong...
