Ok these nuts are like ludicrously expensive - is there a reason for this ?
Frankly i try to steer clear from nuts altogether because of the calories but for some reason i find pine nuts intriguing ?

Pine nuts you need to look at them. If they are yellowed, they are rancid. Need to buy them as white as possible.
Something you can leave out if too exp.

Rev, for you that should be easy, you ARE a squirrel after all!
Our local grocery store has them for $40 a pound!!
When I asked at Costco - they said there was a "shortage" of them and that's why they stopped carrying them (because their price had gotten too high).
I can get them a few miles away for about $20 a pound. There's just nothing like them though, is there! *Ü*

so what's so special ? is it the taste ?
i like roasted macadamias not so much raw ones. my favorite nuts to eat raw are hazelnuts and walnuts.
of course i could blend any raw nut into milk but then i might as well use something cheaper ?

There's no real reason to use a nut which cost 5x more than, say, almonds - is there? Pine-nuts aren't more expensive because they're healthier...

Haha YES! All the time when I was a kid, these were one of the 'wild foods' we used to harvest and eat. We called them monkey nuts, delish! We also use to eat blackberries, wild mushrooms as big as dinner plates and the bulbs of a particular grass we called yams. :throwhearts:
And sometimes the pine-cones are so sticky with resin - that stuff is near impossible to get off the hands. Smells great though :)

Personally, I'm not a fan of pine nuts. Sunflower seeds are a good substitute as well and, yes, add them to your smoothies for a milky taste.

I use pine nuts rarely because of the expense. For me, pine nuts add a cheesy flavor so I will use it if I'm craving that flavor. If I have pine nuts in the house, I will use it as a substitute when a recipe calls for nutritional yeast.

I do exactly the same thing!!
In a lot of recipes that call for them, I just sub them out with sunflower seeds or cashews, depending on the recipe.

I love pine nuts, they make a wonderful pesto, but they are so expensive I rarely buy them.
Most recipes that call for pine nuts I use macadamias or for sweet stuff, cashews. Other nuts/seeds I might use include sunflower seeds, almonds, walnuts and pecans. It depends on the recipe. As mentioned, there's nothing in pine nuts you can't get from cheaper nuts.

Haha, us COUNTRY Aussies! I realise now my upbringing was so great for teaching me about the outdoors and foraging and being active. We used to harvest as much as possible so we could put off going home for something to eat as long as we could. Blackberry season meant we stayed out all day! :eat
There's a crêpe recipe in RFFE which uses pine-nuts and, wow, those things are incredible. I don't have the book here right now...but they're the one's with the blueberries in them; if you had to turn the page you'd get to the rosemary crêpes?
