View Full Version : Kale Chips - a recipe question

I've made Kale chips twice and they seem to be too greasy, I've used olive oil, and the last batch I used 2 bunches of kale and I definitely measured the oil... does anyone make these without oil? or has any one tried it with coconut oil?

I'm not convinced I like them yet and not sure why. They weren't "dripping" with oil, but they were definitely coated well (I used the recipe from Alissa's book). I had definitely dehydrated them the length of time it said, (and possibly a bit longer)

I followed this recipe http://www.grassdirtcorn.com/2009/09/how-to-make-delicious-kale-chips-in-the-dehydrator/ and they were a great success. This recipe is actually modified from a recipe found here at raw food talk. Link is clickable above recipe. I basted the kale in the mixture and then placed them in the dehydrator. The liquid left I saved for another batch another time.

While we're on the subject, does anybody know just how the greens change if they are actually heated past "raw" limits? I had some raw kale chips for the first time last month, and I'm hooked. However, I bought them for an outrageous amount, and if I want any more now I'd have to make them in an oven. :(
I'm wondering how harmful it would actually be... at least for someone like me. I can handle small amounts of non-raw things like vanilla, brazil nuts, spices, and sometimes some nut butter.

Harmful? Not sure what you mean. I've made kale chips in both the oven and dehydrator. The dehydrator chips are much better (the chips from the oven seem to get too dried out and fragile).

Have you tried to find a dehydrator? You could probably find a Nesco Gardenmaster type for under $50 on Craig's list (that's where I got mine) or ebay. You can try asking for one off Freecycle if that's in your area. The Nesco dehydrators are perfectly fine for just about any dehydrating purpose.

My favorite way of eating kale now is to mix it with a tahini dressing. Yum. Faster and tastier than kale chips.

Which recipe are you using? I never use oil in my kale chips. I either follow rawknitsters recipe or I use poleidopy's cheez it's recipe. With the latter, I make a double batch - half I use for cheez its and the other half I use for kale chips. Just makes it easier and they taste amazing either way.
