I just wanted to add that the extra avocado mixture you have left over is great for dipping with Alissa's nachos. It is very spicy.
Your pictures always make me hungry! I assume it tasted good? Now I've gotta go buy myself an eggplant ;)

kmik, it was very good. There are 2 different layers that you spread on the eggplant slices before you roll them up to form roulade. You can actually just use the avocado spread and omit the dried tomato spread, however, it is the 2 contrasting spreads that give this dish and international flare.
Also, this dish is a little labor intensive when compared to other recipes in Alissa's book. However, there is no down time. I mean as soon as you make it, you can eat it. You do not have to dehydrate it. You can if you want, but I chose not to.

Thanks sweetgoddess, I do try. I am curious if anyone else in here likes the eggplant roulade. Tell us if you have made it and what the reactions were from the people who tried it.
Also, I would be very interested to know if anyone has made any substitutions or modifications to this recipe. You know me, I am always trying ways to improve any dish.

I've got some in the dehydrator right now. I'm excited! I think it's going to turn out awesome.
I couldn't get the picture posted in the original link. I wanted to see it.
I ended up with a huge amount of leftover eggplant strips, so I'll make eggplant bacon with them.
I'll let you all know how it turns out.

It was good. It wasn't oral heaven but definitely worth making. Nice contrast of flavors and fun to make. I took some to work and enjoyed it even more later at room temp just for having a home-made meal to nurture myself with. Looked bad like much of my food.
