I have not been eating nearly enough for probably about 4-5 days now.
Not drinking nearly enough either.
I've lost 8 pounds in that time.
What is the potential when I do get my appetite back and start eating (all raw) that I will gain alot or all of that 8 pounds back?
Thank you

First and foremost if you have not been eating or drinking some of the weight loss is simply from dehydration from the forementioned. It is very unusual to lose 8 pds of bodyfat in a brief period of time. Even in a fasting state it takes a deficit of 3500 cals to burn off a pound of fat.
So it is hard to say but you should expect to put 4-6 back on when you resume the eating and drinking. Weight loss due to lack of water is not healthy. I would resume the water ASAP and slowly increase the food consumption back to normal ...or desired level. That way your MET has time to catch up again.
