Does anyone have a favorite salad? I love eating salads and i'm looking for some new ideas. So far this is one of my favorites! I LOVE it, its soooo good! I got it off of youtube (BeeRawAu's Channel) She has some great videos and recipes...
Broccoli With Cheese
INGREDIENTS
1/2 head Cauliflower
2 heads Broccoli
1/2 tsp Himalayan salt
SAUCE
1 1/2 cups Cashews
1/2 cup of Spring water
2 Tbsps of Nutritional yeast
3 Tbsps of Apple cider vinegar
1 clove of Garlic
1 tsp of Italian seasoning
TOPPING
A sprinkle of Nutritional yeast
(You could also put 3 Tbsps of Golden flax meal)
METHOD
- Cut the broccoli and cauliflower into florets
- Put broccoli and cauliflower into a large bowl of nearly boiling hot water
- Massage the broccoli and cauliflower in the water and drain
- Add himalayan salt to tenderise even more.
This will make the vegetables more palatable without negatively affecting the nutrients.
SAUCE
Blend all ingredients in a high powered blender until smooth and creamy
- Pour the sauce over the broccoli and Cauliflower and mix well
- Spread evenly over a dehydrator sheet
- Sprinkle with Nutritional yeast (No more than 2 Tbsps, it could get a little overpowering)
- Put in the dehydrator at 60 degrees for 2 hours
- Alternatively place in your oven at the lowest temperature with the door slightly ajar
- Lay a bed of mixed greens on each dinner plate
- Use a spatula to transfer desired portion onto the mixed greens
- Sprinkle with Flax seeds and Pepitas (pumpkin seeds) for a crunchy garnish
** (I also sprinkle on cayenne pepper, i like it spicy :D)
Hi GreenT ~ I just *love love LOVE* raw salads! (I'm talking the non-lettuce kinds). I'm subscribed to Brittany Bullen's YouTube (http://www.youtube.com/user/brittanybullen)channel. Take a peek, I just copied down several of her salads, they look so good!
Here's one of my favorites, I just made it this morning - YUM!!
You can watch Paul make this on YouTube. My tweaks are in (...) This is one of my personal favorites.
Spanish Rice - Paul Nison
1 head (1/2 head) of cauliflower, grated in a food processor
4 green onions, diced
2 tomatoes, diced (I usually add more tomato)
1 orange bell pepper, diced
1 (1/2) jalapeno pepper
2 tablespoons fresh lemon juice
1/4 cup cilantro diced
1 avocado mashed in
1 teaspoon chili powder
1 tablespoon paprika
1 (1/2 tsp) teaspoon sea salt or to taste
1/4 cup cold pressed extra virgin olive oil (I use less - 2T or so)
(I add at least 2 tsp ground cumin)
Mix together well, adjust seasonings and serve. As a side dish, serves four.

It's funny, when i was a kid my mom tried so hard to get me to eat my greens or salads.....I hated them! Now, you can't get me to stop eating them....I so LOVE them!!

The following is my own creation and regular staple in my diet:
Red Leaf Lettuce
Chopped Kale (optional)
Chopped Walnuts
Cashew Nuts or Chopped Almonds
Avocado - 1/2 or whole sliced
I season with celtic sea salt and a small amount of garlic pepper, dressing of your choice (my preferance is Annie Natural's Woodstock dressing). On occassion I will add steamed fish (Black Cod, Alaskan Salmon) and/or a steamed egg for protein.

One of my favorite salads is a combination that doesn't really sound appealing at first, but when you taste it - wow!
-Portabella mushroom (marinated in nama shoyu)
-One orange
-Lots of spinach
-One avocado
Mix these together, and drizzle some raw honey (or even some more nama shoyu) over the top, and enjoy.

Can't blame you for avoiding the salads of old. The ones I remember and still see in restaurants are terrible (iceberg lettuce, stale frozen tomatoes, and not much else). Thank god for the imagination:)!

No problem, I hope you enjoy it! I forgot to mention that adding a little bit of olive oil to the mushroom marinade makes it even better.

Shels - that sounds great - next shopping day - will get portobellos
orange with spinach is delicious. so is mango - on the softer side.
DebB - thanks for the U tube link - he's cute with his joking around. love the canned laughter!
I never bother to get involved with utube, blogs, etc, but this has a purpose and straight forward.
I love cauliflower cous cous. I don't have the recipe in front of me, but it's so good even my husband had some!
And I love the good old sald - but with spring mix and baby spinach, tomato, cuke, avocado - it's really the balsamic vinagar or apple cidar vinager that I'm really after, add some fresh meyers lemon and I'm happy. I'll add mango, but the frozen so its mushy and has all that juice. Oh, and soaked sunflower or pumpkin seeds.
Oh, and soaked sunflower or pumpkin seeds.
You know what's really neat to do with the soaked sunflower seeds? Sprout them! The nutrition level raises when we let them sprout. And they'll sprout - they'll get nice tails. But just let them get a tail, not a long one or they can turn sort of bitter. Then I dehydrate them.
I learned that from Rene Oswald's YT episode on "Staple Stash". (http://www.youtube.com/watch?v=FSCv-39TWvE)I love learning these things! *Ü*

Salad:
tomatoes (the good kind not big, flavorless ones
red onion, chopped very finely
avocado
garlic grass (mmmmmm)
Dressing:
tahini, about a tbspn
olive oil
acv
tamari
1-2 tbspn freshly grated ginger
^^ This is my very favourite dressing lately. I find the more ginger the better. And I really like to have a salad with no lettuce in it sometimes. I love lettuce but I think it can take away from the other flavours in the salad.
