Hi everyone
I'm new to the raw food diet and still finding my feet so please indulge me :o
My favourite recipe so far has been a Natalia Rose one for Coconut Pad Thai (SO DELICIOUS!), however it has half a regular coconut per serving, as well as almonds and seasame oil in the dressing, so I'm quite concerned about the amount of saturated fat in the dish. I'm trying to lose 40lbs as well as get healthy, and I just can't get my head around how I could still lose weight eating this!
Does anyone else eat loads of regular coconut meat and still lose/maintain weight? Should I limit how much coconut I eat? I would love to get hold of young thai coconuts but can't find a local supplier and can't afford to order them in bulk :(
Thank you for replies!

I would encourage you not to get too concerned about fat amounts when you are starting out on raw. Eating healthy fats helps your body get rid of unhealthy fats. My mom told me a story once about some farmers that started feeding their cows coconut oil thinking it would help fatten them up. They discontinued the practice because all the cows started losing weight. When it comes to some things, raw food has different rules for how it affects you than traditional western "nutrition rules" dictate.

Do you have any asian groceries near you? I went to one last night and was thrilled to find a few coconuts in their refridgerator. It'll be my first young coconut - I can't wait to try it.

+1

When your body is fed healthy fats it no longer needs to hold on to unhealthy fats stored for energy. If you're trying to lose weight and you're exercising, dates + coconut oil + 1/2 banana makes a great energy booster before workouts and help you burn fat.
