Do you track your nutritional intake? Do you guys know how much fat, carbs and protein your getting? What is your caloric intake?

I am using a FitDay (http://www.fitday.com/) program to track my nutritional intake and I can’t help it – but 38% of my calories are coming from fat, I get 7% protein and 54% are carbs. I had few days where my fat intake was 50%!!! I mean 1tbs of olive oil has 119 calories - all of which are fat.

I also have noticed that since my last fast (was 21 days on water and some juices) I have gained 8 lbs. I realize that some of it is water gain and what not, but I simply wouldn't want to gain weight eating raw. I do crave and eat fatty things quite a bit - nuts, seeds, avocados, olives - but I realize that this is partially due to detoxing.

World Health Organization states you only need 5% protein so I feel pretty good about my 7%. I would like to balance more the fat/carb ratio though. I feel for my body getting 25% fat would be most ideal - but I haven't been there yet.

Any suggestions for fat-free salad dressings, beside lime/lemon juice?

I use cronometer to track mine but I keep my fat levels below 10%. I have no problem doing this. Most days it is nearer to 5%
I get 2000 calories a day but I am a little granny who only weighs 110 lbs so that is plenty for me.
I have set my protein at 30 grams and I usually go over it.
I do not use fractional foods so that means no oil. I do not eat nuts but do eat seeds. I balance my omega 3 and omega 6 well.
I occasionally have a salad and I make my dressing by blending orange juice and sun dried tomato.

I use fitday too. Try not to exceed 10% fat per day. If, say, your stats show 13% fat and 76% carbs just eat more fruit until the percentages are 10% fat and 80-90% carbs. To begin with, you may find you are eating fruit you would rather not have but eventually your appetite for fat will lessen as you fill up on the fruit. To begin with forget calories, just aim for 10% fat and 80-90% carbs. it's all about replacing that fat with carbs.
