Can anyone tell me if wasabi at sushi restaurants is raw? This may be a dumb question but i read that wasabi is a crushed root.. so i would assume i could have it. But im not sure and im new to this and i want to do it right.

I am no expert on raw, but I cook all kinds of things non-raw from all over the world and love wasabi! Most restaurants use tubed wasabi or powdered and then rehydrated wasabi powder to the item you see on the table. They usually have green food coloring or horseradish mixed in to make them spicier.

Wasabi is not common since it costs a lot, especially in cheaper restaurants. High quality sushi places will let you grate wasabi root or horseradish root at the table to keep it fresh and then you can regulate it. The real stuff is great for sinuses, but kinda like ginger it loses some umph after a while of exposure.

I go to a very nice sushi restaurant near my home, they do not offer fresh grade wasabi, and what they have is a small ball of something that resembles green chewed gum lol. But i usually break off small pieces and mix it with soy. Now i know i can order (and take with me) raw soy but i didnt know if i could continue to mix that wasabi in. I LOVE veggie sushi rolls, but i really like it better with a little wasabi n soy.

I'm thinking veggie sushi rolls contain cooked rice, yes? If so, does it matter whether the wasabi is raw or not? Please correct me if I'm inaccurate here.

Ditto on comment above. If the stuff you are eating is raw, maybe slice up some ginger really thinly and put it in with some beet juice to get that pink color. That way, you could have some of the stronger spicy flavor from the wasabi and ginger all in one. Maybe grate up real horseradish root. I think true wasabi would be costly.

You can get any sushi roll without rice or meat. You just have to ask, they will leave it out and wrap it differently. Yum. Try it, any good place will be happy to alter them for you.

I've not seen meat in sushi. I know they have them w/out fish but what does one make sushi with if there's no rice? What's left? How about toasted seaweed?

I personally wouldn't eat any raw vegi sushi (even after asking not to use the rice) in a restaurant for two reason. The nori roll is roated, second with all the parasites coming from the fish and for them using the same knife or cutting board, sadly it will go in your vegies as well. The wasabi kill the parasite.

I prefer making my own raw version at home. It is so easy to make, not worth the risk in those restaurants.

you could always grow your own :) http://www.richters.com/Web_store/web_store.cgi?product=X6720&show=&prodclass=F022&cart_id=4572961.22537 apprently it is not too fussy a plant if you grow it from the started shoots (its harder from seed apparently) but it takes up to 2 years to get your first harvest .. not unlike asparagus really or decent size artichokes .. although patience in gardening can be a hard virtue to cultivate :D (pun intended !)

Just to be clear:


The pure, clean pungency of wasabi is especially valued in Japanese cuisine because it produces an enzyme action that helps kill germs and parasites when eating raw fish and is said to help digestion. I make it at home. Nori sheets, avacodo, shredded carrot, shredded cabbage, cucumber, bean sprouts, and a tahini/wasabi mix. Very good.

As I was researching Parasite cleanse. Horshradish juice with lemon is supposed to kill those little bugs. You can make your own wasabi raw from the root if you can get it. I have not seen any horshradish root anywhere.
