Question about Buckwheat

I just bought some buckwheat and how do I know if I need to dehydrate it? Because it looks like the same buckwheat that I have bought before that was already dehydrated. So I was just wondeirng, I am getting everything ready for my calzones.

Raw buckwheat doesn't need to be dehydrated, at least none that I've ever bought did. I'm making mini calzones for Christmas. The buckwheat soaked last night, sprouting today and tomorrow. Love that recipe!
