I was wondering what I can make from the almond pulp when i am done making almond milk? I know that there is a recipe for Angel Food Cake, but I was wondering if there was anything else. Also is the almond milk suppose to seperate when it is in the fridge?

Almond milk does seperate. Still okay to use. Some say use within 2-3 days, others say use within 5 days. I'm good with up to 5 days.

I keep a quart container in the freezer for putting almond pulp in. When it gets full that is enough to make any number of cakes or cookies. I like the cake recipes in "Cafe Gratitude - A New World of Raw Desserts" which call for wet almond pulp (fresh or frozen and thawed) and the cookie recipes in "everyday raw desserts" which call for dry almond flour (dehydrated almond pulp).

These recipes are huge! I almost always cut the recipe in half.

Thank you so much! I will start saving my almond pulp and do what you do. I am glad that it is good for up to 5 days, because I have used mine for that long also. I will have to look at those books. I need to get some more recipe books!

I also use it as Bread crumbs. (raw onion rings)

I put my almond pulp in the dehydrator overnight, store it and use it in cookies. If I add vanilla bean to the milk that pulp goes to cookies if not, to another recipe. Can't let all that go to waste. :)

The other day I made some sort of Gingerbread cookie/cracker thing. Tweaked it a bit from this:

I created a gingerbread cookie recipe yesterday that turned out pretty well

ingredients

100g brazil nuts or any nut of choice
100g almonds
200g dates
about 3-4 tablespoons of honey/agave
1-2 tsp of ground ginger
1tsp of cinammon
1tsp nutmeg
1tsp ground cloves
zest of half an orange



1 cup of almond pulp
1/2 cup of fresh brazil nut pulp
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Ground cloves
4 tsp honey
1 tsp cacao powder
1 ripe pear
1/4 orange
1 Piece of fresh, minced ginger

Just whipped up some leftovers. LOL! Came out really good!
