This was a delicious meal! I wanted more! My boyfriend was very impressed. :D

No not Alissa's. The mushroom recipe is from Raw Food Made Easy and the broccoli rabe and carrot/zucchini slaw are my own creations.

ooh Jan Noir! this looks tasty!! I loove stuffed mushrooms! You should try out the pesto-stuffed mushroom in RFFE -- I made 4 portobellos stuffed with pesto rather than the button version.. HUbby loved it !

I am liking that broccolini there -- what is on that?

Thanks! I'm going to do the pesto stuffed mushroom this week.

This is actually broccoli rabe, rape or rapini to some and not listed as organic. I can't seem to find organic rabe. The marinade is olive oil, lemon, apple cider vinegar, pink sea salt, garlic and a dash of tamari.

Sure can! All I did was shave the carrots and zucchini without the peel until I had enough for my meal for 2 people (no measurements). I poured a about to 3 capfuls of apple cider vinegar and a less than 1/4 tsp of maple syrup and tossed everything lightly with my fingers to make sure the "slaw" was coated.

It came are really good and rounded out the flavors of the heavier pate mushroom and bitter broccoli rabe.

looks delicious. I only began enjoying portobello mushrooms recently. they've got such a nice flavor if you warm them up in the dehydrator with some oil salt and pepper.

I think I was born to be raw too!

looks great, what is the stuffing?

Sunflower-Herb Pate

1 cup soaked raw sunflower seeds
2 Tbs of water
2 Tbs of Lemon juice
2 cloves crushed garlic
1/4 tsp of sea salt
1/4 Cayenne pepper (you can use black)
2 Tbs of minced red onion (you can use any kind)
2 Tbs of minced parsley (you can use basil or dill)

Grind all ingredients except onion and parsley into a paste using food processor

Transfer paste to mixing bowl, add onion and parsley, mix well and serve.

Leftover pate was my lunch today. I ate it with crudites. DELICIOUS!

I'm think I'm going to make Pesto tonight and use that to stuff portobello mushrooms.

Me too. I never liked them before because I didn't like the way they looked (that was very bigoted of me :( ) However, after yesterday, I've become a Portobello Queen! :)

I don't like mushroom, but what you stuffed it with looks yummy. Someday I'll be making raw suppers, someday. ;)

Other stuff-able goodies, just scoop out seeds if space is needed:
tomatoes
peppers
cucumbers
summer squash
avocados
celery
