I'm looking for a recipe to use lemon and cranberries together. I love this combination in baking. Any recommendations for the holidays? yummy

well, the first think I think of is something I've made in the past which is Cranberry Jam.

bunch of cranberries, two little mac apples, some honey, and lemon juice.

It's really nice on flax crackers :)

I am thinking that you could make lemon cranberry scones too.
or lemon cranberry bars.
I have made lemon cranberry bars before. First I dehydrated the cranberries though.
the mixture included dates, flax, tahini, honey... and im not sure what else.

I used to love scones...I would love a raw recipe for this...I guess I could make it with figs or dates and make lemon cranberries newtons...

nadien - your cranberry jam sounds delish. I have a heap of flax crackers and am tired of my traditional onion dip. I just happen to have some cranberries, honey, apples, and lemons ... hmmmm --

heading out to the kitchen ...... :)

How do you dehydrate cranberries? I tried once then gave up before they were done. I have several bags in the freezer for later in the year. The jam sounds delish.

yes, it is VERY delicious!

well, to dehydrate cranberries, you have to pop the skin first, or they will not dehydrate properly.
I found that the best way to do this without flash boiling them, is to cut them in half. They will still turn out nicely.
OR, you can boil some water, and pour the hot water on the cranberries, let them sit in it for about a minute, then take them out. Hopefully the skin will be popped.
I've been more successful just cutting them in half.
They DO take a while either way, to dry. So be patient!

I've never made raw scones, or scones in general, but the idea sounds wonderful. If you do this, be so kind and post about results so I can give it a go too!

I made some of this yesterday ... added a bit of white ground chia to make it thicker ... it is Very good!

Namaste13 and anyone else that might be looking for a raw scone recipe. This was posted by Eva on another thread. I have made them and they are very good. My hubby likes them too.


Lemon Blueberry Scones (recipe provided by Elaina Love)
4-1/2 c almond pulp
1 c coconut oil
1 c flax seeds ground into meal
1/2 c agave, honey or date paste (I used agave for 1 batch, honey for the other)
1 T lemon zest
1 tsp. sea salt
1 C dried blueberries (the first batch I made had dried cranberries because I didn't have any dried blueberries)

Mix the almond pulp and the flax meal together BY HAND in a large mixing bowl. Add the remaining ingredients and mix well. Divide the batter into half and shape into two 1-inch round loaves. Cut the circular loaves into 8 small triangles, for a total of sixteen pieces.

Dehydrate at 135 degrees for two hours. Check the texture of your scones. If more drying is needed, adjust the temperature to 105 degrees and continue dehydrating for an additional two hours. (I live in a humid climate and found I had to dehydrate 8 hours or longer.) Store in refrigerator for up to a week (if they last that long). Serve with honey or jam and fruit. (Personally we just eat them plain, warmed from the dehydrator).
