View Full Version : Alissa's Saffron Sauce over Asparagus

Okay - if you do not have Alissa's new book, buy it immediately - AMAZING!
On page 238 there is a recipe for Asparagus wrapped in Eggplant Bacon - I prepared the Asparagus as described and left the EB off.
Then, I made the Saffron Sauce from page 300. I did not need much, so I quartered the recipe. It turned out too thin, so I added a little Young Coconut Meat.
The dish was so incredibly delicious - I took it to a potluck and everyone went wild over it.
I hope you can see the photo - I enlarged a thumbnail and it does not look so good on my end.

That recipe looks and sounds delicious. The recipe says that you have to let the saffron bloom, how do you do that? I have never bought saffron, i put it on my list :)

To "bloom" saffron you just soak it in water overnight - Alissa calls for 0.5 grams of saffron to 4 cups of water. My entire "batch" of saffron weighed 0.5 grams so I took about a 1/4 of it (visually - my scale does not weigh that small an amount) and soaked it in 1 cup of water. Next time, I might reduce the water to 3/4 cup.

YUM! My problem with making Eggplant Bacon is that I eat it all as soon as it comes out of the dehydrator :p
Perhaps I will work on my self-control and actually save some for a recipe!

I just picked up the book today ... am anxious to take a look at some of these recipes. They look awesome!!!
I've made the eggplant bacon from a different recipe a while back --- it was pretty good.
