Okay, I'm getting into the Christmas spirit here, got my tree decorated and shining with lights!!

Now, I'm want to make some treats throughout the December and listen to holiday music when I do!! :)

Any recipes for Christmas you would like to share is more than welcome!!! I'm looking to make anything that is festive for Christmas and would like to plan out a Raw Christmas Breakfast, Lunch, and Dinner! Sounds fun!! :D

Christmas in a cup~

Carrot tops have this wonderful flavor I can only describe as "Christmas". The sweetener and nuts aren't necessary, just give it a richer flavor. I usually leave them out, unless I'm trying to impress someone with an extra sweet tooth like my mum. The spinach I like to sneak in with or without her.

frozen bananas
carrot greens
chopped fresh ginger
dash cinnamon
water as needed

Optional:
small handful spinach
sweetener (dates, stevia, etc.)
small handful of nuts of choice

Toss everything in a blender, along with enough water for your desired constancy and to ease blending. Blend until smooth, but don't worry about itty-bitty green carrot top pieces.

Hmm, never had carrot tops before. It never really cross my mind that it was edible! So it taste like Christmas, huh? :D Nice!!! I'll have to try ii. I'll let you know how I like it! Thanks for sharing!! :)

I'm making donut holes for Christmas breakfast, raw nog, Alissa's sausage, raw pancakes, and some fruity raw syrup.

This is what I planned so far....

So what is everyone planning to make for Christmas?

No prob. :) It's one of my favorite green smoothies, and it's nice because I almost always have the ingredients on hand.

For xmas I'll be most likely attending a potluck.

I got the Christmas breakfast planned,

Need festive Christmas recipes for raw candy treats, lunch ideas, dinner ideas, sweet apple cider drinks, something that has a mint taste to it, raw pastries, and raw pies

I created a gingerbread cookie recipe yesterday that turned out pretty well

ingredients

100g brazil nuts or any nut of choice
100g almonds
200g dates
about 3-4 tablespoons of honey/agave
1-2 tsp of ground ginger
1tsp of cinammon
1tsp nutmeg
1tsp ground cloves
zest of half an orange

put the nuts in a food processor and process until a fine 'crumb'
add the spices, (i used 2tsp of ginger which made it really quite spicey!) and orange zest
turn the processor on and add the dates one by one and then drizzle in honey/agave until the mix forms into a dough ball.
wrap the dough up in plastic wrap and put in the fridge overnight to firm up.
when the dough is firm, roll out thinly and cut out shapes. i found it helped to roll out on a texflex sheet as the dough is quite sticky.
place on dehydrator trays and dehydrate til desired texture. I did mine for around 12 hours (turning half way). they were nice and dry on the outside and still chewie in the middle. i think to get them crunchy like biscuits you'd need to dehydrate them for about 24hrs.

Sorry, this thread got away from me!!! And so did my plans to make Christmas treats. Oh well, I'll be more prepared next year!!

I'm gonna have to rethink my Christmas plan for raw food. I'm gonna find something simple and easy to make.

I haven't made anything yet and Christmas really got here fast!! So.....I'll let ya all know what I've decided to make for Christmas!!

I would love to have a great boyfriend who is an awesome raw food chef for Christmas!!! :D

Dinner: Aspargus with Cheezy Sauce

Here is a nice little recipe that I just made. It is from the book Eat Smart, Eat Raw by Kate Wood.

Christmas Sweets

I cup almonds
1 cup chopped dried figs
1 cup raisins
Juice of 1/2 an orange
1 teaspoon cinnamon
Pinch of nutmeg
Pinch of cloves

Put the almonds in a food processor and pulse until finely chopped. Add remaining ingredients and process until the mixture forms a 'dough'. Form into little balls and enjoy!

Makes approximately 25 sweets.

Note: I got about 33, so I guess I made mine a lot smaller than they were supposed to be. Still good though! :)

Cinnamon Roll Smoothie by Sirova
--------------------------------------------------------------------------
Another delicious way to drink more selenium-rich Brazil nut milk! This smoothie features fragrant cinnamon, sweet vanilla and other delightful ingredients. So much better than a cinnamon roll!

Ingredients:
- 2 cups Brazil nut milk (blend 2/3 c. Brazil nuts and a little vanilla bean with 2 cups water and 2 T agave nectar. Strain.)
- 1 piece vanilla bean (about 1 inch)
- 2 T agave nectar
- 1 t cinnamon
- 3 small frozen bananas
- Dark syrup such as agave nectar or yacon syrup.

Directions:
- Blend all the ingredients together except for the dark syrup, which you will use to drizzle the inside of the smoothie glasses (optional but pretty!)
- Pour the liquid into the decorated glasses, and sprinkle a little more cinnamon on top.
Enjoy!

Whoa-Raw's Notes
~will use honey instead of agave nectar
~ will make caramel syrup instead of using yacon syrup
Carmel by someone on RFT (sorry forgot to copy and paste name)
I divided this recipe in half since 1 cup of caramel will be too much for the smoothie.
I/2 cup walnut. 1/2 cup dates, 1/4 or 1/8 teaspoon of vanilla
I can always make more it needed.

Raw EggNog by rawpriestess
--------------------------------------------------------------------------
This is my version of classic eggnog, without the egg or the nog

Eggnog
2 cups almond milk
5 medjool dates (pitted)
1 tsp cinnamon
1/2 tsp cardamom
1/4 tsp nutmeg
2" vanilla bean or 2 tsp vanilla extract
1 T olive oil (optional, but makes it taste about 10 times richer, like an egg nog)
dash of sea salt

Garnish with:
Dash of nutmeg on top

You can turn it into a milkshake, by adding 1/2 cup of ice.

I sometimes use less vanilla depending on the type of vanilla bean I am using. and I also varry the spice depending on the strength of the spice, if you add ice to it, you need to up the spices to counter act the numbness your tongue will have, which causes you not to taste as keenly.

The next three recipes are Ani Phyo's recipes. I haven't tried her recipes so thought it was a perfect time to do so, since I keep hearing how good her stuff is! :)


Deep Forest Carob Cake with Fudge Frosting by Ani Phyo
--------------------------------------------------------------------------
Cake

3 1/2 cup Brazil Nuts
1 teaspoon sea salt
3 cup pitted dates
1 cup carob powder
3 cups of shredded coconut

Frosting

i cup pitted dates
1/4 cup carob powder
1/4 cup extra virgin olive oil
1 cup water as needed

To make cake, process Brazil Nuts and Sea Salt into powder in your food processor. Slowly add dates. Empty into a large mixing bowl and add carob powder and shredded coconut. Mix well and form into cake shape on a plate.

To make frosting, place all ingredients into your blender. Blend into a smooth frosting. Frost your cake

Will keep for seven days[

Asparagus With Cheezy Sauce by Ani Phyo
--------------------------------------------------------------------------
Makes 4 servings

Asparagus

1 bunch Asparagus
1/2 teaspoon of sea salt
2 tablespoon of extra virgin olive oil

Cheesy Sauce

2 cloves of garlic
1 teaspoon of sea salt
1 cup of sunflower seeds
Juice of 1 lemon, about two tablespoons
1 teaspoon of turmeric
1/4 cup water as needed

To prepare asparagus, trim off the bottom an inch of each stalk, Cut the thicker stalk in half. Toss in sea salt and olive oil, and set aside.

To make sauce, process garlic and salt until smooth. Add sunflower seeds and process into powder. Add lemon juice and turmeric and mix well, Gradually just add enough water for a creamy cheesy sauce texture

To serve, place asparagus on four plates. Drizzle Creamy Cheese Sauce Over each.

Optional: You can dehydrated asparagus at 104* F for 1 hour. Don't over dehydrate, you just want to help the asparagus wilt and soften a bit. Serve with Cheesy Sauce drizzled on top.

Will keep in frigde for two days.

Wilted Spinach Salad with Marinated Onions in Mustard Seed Dressing by Ani Phyo
--------------------------------------------------------------------------
makes 4 servings

Marinated Onions
1/2 yellow onion, sliced
1 tablespoon of apple cider vinegar
1 tablespoon of Bragg Liquid Amino of Nama Shoya
Pinch black pepper

Mustard Seed Dressing
1 tablespoon soft dates or 1 tablespoon of agave syrup, maple syrup, or honey
3 tablespoon of apple cider vinegar
1/4 cup extra virgin oil
1 teaspoon mustard seeds
1/2 teaspoon sea salt

Salad
8 cups of spinach
2 cups of carrot julienned
Pinch ground black pepper

To marinate onions, combined onions with vinegar, Bragg Liquid Aminos, and black pepper. Set aside to marinate while you prepare the rest of the salad.

To make the dressing, if you using dates, soak them in tablespoon of water for five minutes. Mash the dates and water until it becomes a thick syrupy paste. Pour syrup, vinegar, oil, mustard seeds, and salt into a small bowl and mix well.

For salad, place spinach and julienned carrots in a large bowl. Pour in marinated onions including the marinade. Toss with Mustard Seed Dressing.

To serve, top tossed salad with a pinch or two with black pepper. Set aside for five minutes or more to allow more time for wilting. If you're like me and can't wait, it's okay to eat right away.

Salad mix will keep for one day, dressing will keep to three to four days, and marinade onions will keep for one day in the fridge when store separately

Update Correction: for the caramel recipe, I put honey instead of vanilla. Didn't type in cup for dates in the same recipe.

For the Wilted Spinach salad, my mistake is that I put in 1/4 yellow onion, sliced, really it should have been 1/2 yellow onion sliced.

For mustard seed dressing, 1/2 teaspoon of sea salt, not tablespoon.

I over looked the fact that I needed dates for the fudge frosting that I ended up using the dates that I saved for the raw eggnog. So is there a sub. that I can use in the place of dates? Will honey work since it's a sweetener. And the stores are closed tomorrow where I get my dates.

Oh, I just realized that I need dates to make caramel too...... oh well that part of the recipe is optional so my cinnamon roll smoothie will be fine without it.

Making the fudge frosting is so worth it!! Really got the texture of melted chocolate!!! So good!! The Deep Forest Carob Cake with Fudge Frosting is chilling in the frigde and will make raw eggnog tomorrow to go with it!!! :D

I just made the Cinnamon Roll Smoothie and it's good. Since I didn't want to strain my Brazil mylk, I made some modifications. I used only 1 cup of brazil nuts since it was all I had leftover from making the cake, which is partially the reason for not straining the mylk. I upped the the cinnamon, honey, vanilla, and water, And I drizzled the inside of the glass with honey, since I didn't have dates to make my caramel to drizzle with! The texture is thick like eggnog, since I didn't strain the brazil mylk. It's delicious!!

BTW, ths salad was really good, I doubled the dressing just because I love dressing in my salad!! :D

The Wilted Spinach Salad with Marinated Onions and Mustard Seed Dressing pic got deleted by mistake. I will post a pic when I make this salad again, I have some food leftover to do so, :)

The Raw Eggnog is GOOD!!!!!! No kidding!! I will make this again next year!!

I will use the Fudge frosting again to top off off my banana ice cream!!!

The Asparagus and the cheesy sauce was better than I thought it would be. So that's good.

The Deep Forest Cake has more of a coffee cake flavor to it. The person I shared it with really enjoyed it very much!! So that's cool!! :cool:

And the carob cake gets better and better in the fridge as the each day goes by. Had it to up 4-5 days!! Yum! I will make it again when a certain kind of a day calls for this kind of cake. :)
