View Full Version : Five Pounds of Mushrooms! Help!

I just bought five pounds of mushrooms straight from the farm (for $4). I need some suggestions of what to do with them to preserve them. Have any ideas? Thanks!

Slice, marinade in a sauce of your choosing for a few hours, then dehydrate for mushroom jerky. Chop and add to breads, crackers, pizzas etc. Marinade, dehydrate for 3 /4 hours and put on salads or pizza. Dehydrate the mushrooms & some herbs, then crush & put in nice jars & use / give away as a mushroom & herb seasoning

I ditto the marinade and dehydrate.
I don't even let mine site while marinating the flavor locks in durign dehydration. Oh so yummy plus if there are anyleft you can probably easily freeze.

Five pounds of dehydrated shrooms will probably shrink up so much that you can finish them in two days just as snacks or toss onto salads and make some pizza.

Do you have Alissa's new book? There is a great recipe for pickled mushrooms made with lavender -- OMG -- they are amazingly delicious. I used about 2 lbs and they really "shrunk" in the process of pickling, so next time I will probably use 4 lbs.

So easy, too - just store in a jar in the refrigerator.

Wow! Great ideas! I don't have new book but found good recipes in LOLF. I will start with those plus try the marinade and dehydrate. I hate to admit but I don't like mushrooms that much. With a good marinade I probably won't be able to taste the earthy flavor. Thanks!

Whats a good marinade? Sorry I just have to ask.

The easiest is Shoya and EVOO

For me i definately need an oil base but I've made marinades with EVOO, garlic, italian seasoning, cracked red pepper and other assorted seasonings. Just food process ingredients for marinade then coat your sliced shrooms tossing with your hands til covered and place in dehydrator on a mesh screen only. You can place a tray with creen and teflex belopw that to catch drips if any.

If I have a realjuicy marinade then I place slices of onion below o the teflec tray so that I can dehrate onions plus absorb a little flavor without overpowering the sweet onion.

You can also just store in a ziploc with marinated and have over salad but the shrooms may turn after a while.

Got some in the D now but they maybe all gone before the are actually finished. Delicious

5lbs is really not much once shrunken and eaten;)

I have to say that I love these mushrooms. I marinated half with EVOO, garlic, Italian seasoning, red pepper. I did the rest with EVOO, Braggs, and red pepper. They did shrink down to nothing. My husband loves them and I will definately be making more. Thanks everyone for your help! I will have to try the pickles when I get Alissa's new book.
