I am looking to travel again. I have found that instead of stressing about food and trying to get ready to travel with a 3 yro by myself, it helps to make stuff myself and order some....like crackers, etc. However, the last time I bought some I swear some of them were like licking a salt block.
In addition to being lower in salt content, it also has to be nut and wheat free. Do you know of any good sources?

Fruit leather! :D Just blend some fruit together (don't add water unless absolutely necessary), spread onto a dehydrator sheet, and dehydrate until not wet. My favorite is just bananas, w/o anything else. The flavor's just like banana bread once they're done. When I went on a trip, I rolled the dried sheet into a tight log then cut it into smaller pillow-shaped pieces that I wrapped individually with wax paper and masking tape like they were candy.
Also, whole dried fruits are also great. I recommend having a cup or bowl to soak them in on the road to re-hydrate them. MMMmmm...

Since we will be able to access fresh fruit, we will already have plenty of fruit and I will do some green smoothies. I need something to round things out and crackers are a good thing to do that with as I can also make guac. or get salsa/ hummus and we don't look so out of the ordinary. :p

Flaxseed crackers can work then if you want a nutless cracker. :)
