Is anyone making raw maple syrup (evaporated under 115 degrees)?

it seems to me this would take YEARS.... they have to boil it for hours and hours at a boil temperature normally!

No such thing. If I want maple syrup for a recipe, I use Grade B. It is darker, thicker, and has a heavier maple flavor. Not as refined and contains more nutrients than Grade A.

Try Yacon syrup - it is more like molasses than syrup, but I find it makes a great substitute for maple in recipes

If you know a farmer that do produce maple syrup you can simply drink the fresh mapple water. It is so good and rich.

hmm. we used to tap our trees and the sap coming out of the trees was just BARELY sweet; basically water...

Try Coconut syrup. There are so many health benefits from coconut syrup and it is low glycemic, very very thick and yummy!
