As I was munching on Cheesy Kale Chips, I had the idea to make them into crackers. I just put all the ingredients into the Vita Mix and made a batter. I think I added a little water to get the blender going. They came out a little chewy, I guess because of the cashews, but the flavor it that of regular cheesy kale chips. I love to eat them with salads. Yummers!

Hey, this sounds great - I have a head of kale that needs to be dealt with soon! Plus I'm planning on dehydrating some other stuff ahead of time to take along on a trip that starts December 18th and goes through New Year's. We'll be travelling by car, so I can bring goodies along including my blender since we'll have a kitchen where we're staying out in the Arizona desert. Those kale crackers would really hit the spot out there, or in the car for snacks. I'm making a couple of kinds of dehydrator granola and crackers, maybe some macaroons as well. The dehydrator macaroons have been a hit where ever I've taken them, for instance. I've already done kale chips so I know the drill for ingredients - I like 'em spicy!

Do yours come out crunchy or chewy?

Crunchy. :D I never made the crackers myself, but I've seen Rod Rotondi give a demo and I bought some of his Leaf Organics kale crackers while he was there.

Why have I never thought of this? This sounds like a great idea and like they may travel to work in the lunchbag better than the chips.
Can't wait to give this a try! My favorite variations are either cheezy chips with garam masala or bbq with chipolte powder.

MMMMM!!! sounds good!

Renee I am not set up for pictures but the crackers came out sort of olive drab green and sort of curled on the edges.

These will travel well as they aren't delicate like the chips.

I am having a salad for lunch today and can't wait to have these with it!!!! mm mm good!

I bet adding some spinach to it might be good. Or just make a spinach cracker!
