this is my Thanksgiving meal (I've already sampled it and it's delish- you can +/- sugar, vinegar

ingredients:
sweet onion, med
bell pepper, red & green
cucumbers (3-we like cukes)
kidney beans (red, lite red, white)
greenbeans
marinade:
1/2 c Oil (i use canola- didn't have any evoo)
1 c sweetner (adjust taste to suit your taste)
1 c vinegar, apple cider

slice first 3 ingredients thin (or as thick as you like), place in layers (for the pretty effect) along with the rest of the ingredients, warm the marinade and pour over (make sure container doesn't leak) as you have to flip from top to bottom after 12 hours. can be eaten-after 12 hours but will be better after 24 hours.
I think next time i'm going to add some peppers for spicyness.

Can you eat beans raw? I've tried sprouting them and found them indigestible.

sorry I've not replied before now. I used canned, dd and I picked them out and set them aside everyone else at the dinner ate them that was the only non raw-well the oil but next time I make it I'm cutting back on the oil and going with a mix of evoo and vegetable oil. I ate a small bowl for b'fast this morning- so yummy. I will add some pepper flakes or cayenne to the next batch just for heat and I think it will blend well. will most likely do a test batch as dd and I are the only ones who eat this dish.
