Hi everyone!!!

I taught my first Level 2 Certification Class this weekend!!!!!! It went VERY well!!!! With Alissa's Class coming up in December (very exciting!!!!), I thought you might like to see some of the photos from my Class which is included in Alissa's Class in Maine. Obviously, Alissa's Class covers more since it's a Level 3, but if you take her Class you can be able to teach your very own LEVEL 2 Alissa Cohen Certification Class!!!!! My student gave me permission to post her photo here! So, here are the pictures:

When she named a Sprout correctly, she got to try a GOODIE!!! I made lots of goodies to nibble on! Here is a platter (clockwise) of Alissa's Sausage (RFFE), Corn Chips (RFFE), Banana and Golden Flax Crackers, and Breaded Onion Rings (RFFE):

Day 1 we put the Breads together for the dishes we made. The night before I made "mini ones" for us to put together as the Breads were Dehydrating at class. So, here are the "mini pizza's" we made:

Level 2 is all about the Raw Lifestyle. When you take the class, you will be certified to teach Alissa Cohen Level 1 Certification Class. So, As a special treat for my Student, I asked her to invite a friend for a "free demo class" in which SHE would teach!!!!!! The demo went quite well!!!!!!!!!!!!!! I had her make dishes from her Level 1 class that she took previously, and demo them for her friend!!! Here's what she made:

What a FABULOUS Experience this was for MEEEEEEE!!!!!!! I am so Blessed to have the ability to do this because of Alissa! Thank you so much, my FRIEND!!!! :D

Wow what fun!!!

I have a question though....... how do you make your corn chips look just like the manufactured ones? Mine are always..... well lets just say they taste great but arent pretty like yours! lol

Thanks everyone! The class was a BALL!!! :)

For the Corn Chips, I used to use my Food Processor for them, but to get them to the consistance in the photo, I used my Vita-Mix for the batter. When I make them, after flipping them (before the batter is too tough to cut...) I use my pizza scissors to cut it into triangles!!!! First, I cut the rolls horizontally... Then, with each roll, I make "V" cuts...right, then left, then right... The next time I make a batch I'll take some photos to show you! :)

**applause** THat is SOOOO FREAKING AWESOME!! MAN you guys look like you had sooo much fun!! I am getting more and more excited viewing all these photos!! That is amazing! Did you take the pics too as she was working? You guys made a LOT of dishes in two days! Amazing!

I especially like the vanilla bean cutting -- that was impressive :)

For your crackers and enchiladas, your batter is incredibly smooth and even! - i see that you mentioned you used the vitamix for the corn chips.. what about the wrap do you vitamix your enchilada wrap also? I will HAVE to buy the reusable paraflexx sheets -- I have the disposable ones, which are fine, but I dont like the wrinkling, which can happen when the batter settles on the sheet while spreading... Some of my flax crackers have little folds in them, which give it a little character, but I prefer them to look "picturesque", lol!

- what a neat idea to do a free demo class for a friend! I will definitely think of that when I do a Level 2 class -- that is soo awesome!

- do you have your student complete a survey/ review of her experiences with you? I will likely find this out at the training, but wanted to get your input if its okay?

- I gotta order some "LIVE JUICY" couture, lol! I loooove coconuts, so that will definitely be the ones I order heehee!

- thank you so much for the toddler advice in the other thread! i will definitely try that -- you know, he presses the button when i make smoothies - that is probably why he likes them soo much.. i will definitely try that for the food processor as well. He used to eat everything I made before, but now he has become very selective.. Im told that his appetite will return, but I am impatient... I dont want these preferences to be permanent..

Cant wait to meet you! I need to find my way to Texas and have dinner with you --- the invitation is on the way -- summer would be best for me, lol!

Yes, we had SOOO much fun!!! You'll see what I mean when you go to Alissa's Class! I can't WAIT to hear about your experience!!!

Answers for you:

1. I have done it in a Vitamix before, but I prefer to use a Food Processor. The key is to make sure that your Corn is not still frozen...run it under warm water a few times and it will defrost for you. Before I got my Teflex Sheets I used Saran Wrap. It worked GREAT for me...didn't bunch up or wrinkle at all...

2. I ***LOVE*** the idea of the demo, too!!! It really helps your student to feel comfortable with speaking in front of people and helps them to have their moment to "shine" and "share" what they've learned with those they love before doing it for people who pay them. I know she REALLY loved doing it!

3. Yea, I always ask them to tell me the highs and lows of my classes. I have a sheet for them to fill out (Alissa will give you one as well in the back of your packet from her...) as a feedback form. I use the feedback (and let them know that I do) to help me develop future classes...

4. You are SO welcome!!! Give that toddler a squeeze from her Auntee 'Nee!!! :D

You are SO welcome!!! I'm glad that you are enjoying the thread!!! Yea, it's a good amount of food... But, if you plan it right, you CAN get it all done in 2 days like we did.

It worked well for us making all of the breads/crackers, really anything that needed to be dehydrated, the first day of class. On the 2nd day we were able to make the fillings for everything and all of the food was completely done by the end of the 2nd day. I'm so used to making everything anyway, that part was easy for me! :)
