Anyone have any experience with juicing these two things?

i wouldn't juice either one to be honest. can't image what you'd get out of an artichoke... and a potato... not interested in making my juices that thick and starchy. even sweet potatoes (for me) are too thick for juice.
i prefer to stick with things like beets (for root veggies)... they are lovely in juice.

im pretty sure norm walker talks about them in his juices book if you can get a copy of it. Jerusalem artichoke has FOS in it, which is the stuff that feeds the good bacteria in your digestive system.
