I was looking at Alyssa's new book and wondered about the avocado skins recipe. The directions were a bit unclear to me. Did I read it wrong, or do you throw out the avocado meat and bread the skin of the avocado? Is that safe to eat? I re-read the directions a few times and was still confused. Please advise. Thank you!

The ingredients list says two avocados, halved (cut in half), pitted (pits removed), and gently scooped out of their skins (the actual edible avocado part removed from the skin in such a manner as to retain their shape, I'd imagine). Then step three and four say what to do with the avocado halves. While what I've posted here is exactly what it says in the book, with my elaboration in the parenthesis, I can't imagine where you'd get the idea that you were to toss the edible part of the avocado and eat the skins. Aside from the title of the recipe(which I did not take literally, just to indicate these are similar to something familiar - potato skins).

Hi there - I made avocado skins my first week with the book - yes basically slice the avos in half, then use a large spoon (or fingers even) to pop out the flesh without changing the shape.. then have your breading (almond flour ready to roll and cover). Here is what mine looked like when done --- the sour cashew cream was awesome too! I used some eggplant bacon and some asparagus stalks. Hubby although not raw, really enjoyed it. Other pis of the avocado skins before i put them in the dehydrator are in the Alissa's recipe w/ photos thread. likely page 1 or 2.

Make sure to season the avos with a bit of sea salt before breading.

Blessings!

I know exactly how you feel - I can eat avocados, but have a life threatening mushroom allergy, and everytime I see the stuffed mushrooms or the marinated portabello mushroom pictures it makes me long to be able to eat them. :(

Oh....WOW...that is so sad! I don't know if I could do raw without avocados!

I can also relate... I am allergic to mangoes and raw cashews - can't even eat a little :(
