My symptoms are sneezing, runny and itchy nose, etc.

Is the fruit you've been eating organic?

Where are you? Is this summer in your area or winter or spring???
Some fruits/nut will stimulate allergies in pollen season. Banana is one of them. I had to be careful what i eat in the ragweed season in my area.
Also, sometime, our body needs to adapt.
I hope your figure out what works for you. You could try different fruit such tomato, cucumber etc...

Apples and bananas have made me very itchy but that's because I've been eating them way too much. I was buying 2 bags of Honey Crisp Apples a week :/

My body doesn't react well to fruits that are high glycemic or high sugar content.. I don't know why but that's the way it is. So I generally stay away from bananas and mangos. If I do just have one I start feeling very out of it and spacey.

hmm it could be fructose malabsorption, which is what I currently have. I don't know much about it, other than that it's the intestine's inability to properly digest larger amounts of sugars. The fruits you are eating are pretty high in sugar
Wikipedia said that 30-40% of the population currently has this. Although, Wikipedia isn't the most accurate or credible site!
