Kale plants are growing up in my backyard. I vaguely remember there is a difference in nutrients between baby greens and mature greens. Does anyone know for sure whether baby kales are more nutritious or mature kales?

They have less oxalic acid so you can eat more of them.

By "they" do you mean baby greens or mature greens? I know red mature bell peppers and mature vine-ripe tomatoes have less oxalic acid than unripe green ones.
